Zucchini and Potato Bake

This was ok, not great. Edible, but not something I'm planning on making again. I could see making this if you had kids and were trying to convince them to eat veggies? As an adult who love veggies, I would just prefer roasted veggies with balsamic vinegar. The breadcrumbs didn't add much to the dish.

Mustard Crusted Tilapia

YUM. I had never made tilapia before and this turned out AMAZING. I followed the recipe pretty much exactly (kinda guessed on the lemon juice and used dijon mustard because it's what I had) and it came out great. Really easy, nice because the breading is very light. I'll definitely make this again.

Challah I

This is the best bread I've made. Followed another reviewer's advice of only baking for 25 min. I'm not sure if I'd classify it in the same category as the Challah I had growing up, but it's absolutely delicious. I think if I wanted to make it more Challah-y next time, I'd add more eggs? The bread itself is light and fluffy, I got 3 decent sized loaves out of this recipe. I will say I attempted to make the dough in my bread machine (2 lb loaf max) and it couldn't handle the large quantity or possibly the stickyness- the mixing paddle somehow came off. Still, made it by hand and it turned out amazingly. Dusted sugar, cinnamon and cocoa powder on the top of one loaf, delicious.

Hearty Vegetable Lasagna

This was decent but not great. I added a lot of zucchini and broccoli. Without those additions this would have been very bland. I felt like the ricotta mixture (which is what really makes Lasagna!) was missing something and didn't add much to the lasagna- and that's a shocking thing to hear coming from a WI girl like me. Overall this was good, but if I make it again I will try some additional tweaks.

Whole Wheat and Honey Pizza Dough

This was very good. I left out the wheat germ because they were out at the grocery store. It was very quick and easy for a pizza crust, I doubled the recipe so I can freeze some for later. I'm not giving this 5 stars because it was a very chewy crust, my jaw is a little tired from eating it! But maybe it was chewy because I didn't have wheat germ, not sure. I also baked it at a higher temperature- 10 min just the crust, no toppings at 350, and another 10 min w/ toppings at about 415. Anyway, I'll make this again because it was so easy and quick.

Thai Red Chicken Curry

This curry was edible but there was almost no flavor. I followed the recipe as written, except I added more veggies and omitted the cornstarch. It was missing something- this is a good base for a curry, but you'd need to play around with adding ingredients to make it worthwhile.

Missy's Candied Walnut Gorgonzola Salad

Excellent! The candied walnuts really make this salad. I added an apple and some red onion. I also just used normal store-bought raspberry vinaigrette. Delicious and quick!

Marinated Grilled Shrimp

It's the middle of winter in Minnesota so the grill isn't an option- I sauted these on the stove, I think I over cooked the shrimp a bit but the overall flavor of this dish is excellent! I served it with rice and broccoli.

Cinnamon Raisin Bread I

When I bake bread it generally doesn't come out very well- this turned out GREAT! Light and fluffy. I used a combo of about 1/2 bread flour and 1/2 all purpose flour because it's what I had. I also had about 1/2 cup of chocolate ganache leftover from another baking project that I mixed into the filling mixture. YUM.

Basil Tomato Soup

My favorite soup! I am not a great cook by any means and yet I haven't managed to ruin this soup yet, it always comes out great. I am mildly lactose intolerant so I use soy milk and it still comes out great.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

I was a big cheater with this one! I used store bought cookie dough and froze chunks of it the night before. I also used boxed devil's food cake mix, but instead of the box directions I used 1 c buttermilk, 4 eggs and the normal amount of oil. Extremely easy to do! The cupcakes were good overall and the cookie dough was moist, but the actual cake was rather dry.

Spicy Slow Cooker Black Bean Soup

I've never made a black bean soup before but this was delish! I only had 1 can of black beans, and I added a finely chopped onion, 1/2 cup very spicy salsa and a can of tomato sauce. I pureed before serving and added 1/2 cup of light soy milk to cut the spice.
