Grandma VanDoren's White Bread

adjusted recipe to make 12 servings (1 loaf). Used 1 1/2 c bread flour, 1/2 c regular flour, 2/3 c whole wheat flour. 1 tablespoon sugar only. Extreme difficulty getting it from board where I let it rise to bread stone.

Valentino's Pizza Crust

This was pretty good! I added honey instead of sugar, and slightly less oil. We baked it at 475- first prebaked it with no toppings for about 4-5 minutes, then did about 11 minutes with toppings. It was a nice thicker crust.

Apple Crisp II

This was good! I used honeycrisp apples. I added 2 tablespoons cinnamon, nutmeg and a little vanilla to the apple mixture, and I only used 1/2 c brown sugar instead of 1 c white sugar. For the topping I used 1/4 c butter- came out fine!

Hot and Sour Chicken Soup

This was barely acceptable. I ended up adding much more vinegar because the taste wasn't right, and some chili paste and extra red pepper flakes. I feel like it started to smell a bit odd when I added the bamboo shoots, so maybe I used a brand with an off taste? Next time I will buy ingredients at the Asian market instead of the co-op! EDIT- At the very end of cooking, I tried adding some oyster sauce as a last resort. It helped. I also added 1/2 tsp salt. Still not perfect, but better.

Red Lentil Curry

This was pretty good! I overcooked the lentils and they are cemented on the bottom of the pot, but that's clearly my own fault! This wasn't too spicy at all, and even though my lentils were "mushy" or whatever, the texture was great. I ate this mixed with fresh spinach. The only complaint I have about this recipe is that it definitely did not make EIGHT main meal servings. I got 3 out of it.

Special Buttercream Frosting

This was an ok basic recipe for frosting, but the shortening made it a funny texture and left a waxy feeling in my mouth! Maybe it's just personal preference, but next time I will use butter! If you needed to pipe the frosting, this would certainly be firm enough for that.

Honey Whole Wheat Bread

Excellent recipe! I use my bread machine to make the dough, but I don't really like the shape of the bread if I bake it in the machine so I put it in a bread pan to rise for an hour. Bake at 350 degrees for about 25 minutes. Always comes out great.

Black Beans and Rice

Delicious! I added some extra ingredients but followed the basic outline of the recipe and it came out really well. I added celery and a green bell pepper, along with some spicy peppers and quite a bit more cayenne, cumin and tumeric since I like things extra spicy. I also used brown rice since it was all I had on hand, and it was great. I added fresh cilantro as a garnish. Would have been great with lime juice too.

Spicy Turkey Burgers

These were decent, but I found the paprika flavor to be overpowering. It overshadowed a lot of the other flavors int he burger.

Thai Chicken Pizza

I did not care for this. I love thai chicken pizza in restaurants. This was a peanut butter pizza. I think what I should have looked up was a recipe for thai peanut sauce- the toppings that go on the pizza are pretty much common sense. I thought the peanut butter+store bought peanut sauce combo was a big fail.

Slow-Cooked Corn Chowder

This recipe was fabulous...but I admittedly made a lot of changes! I put 1 can of corn in the blender, with juice. (I couldn't find creamed corn at the grocery.) I added garlic and quite a bit of cayenne, a bay leaf and a pinch of basil. I added frozen mixed veggies in addition to a bag of frozen corn. I used unsweetened soy milk in place of milk and added about 3 tbsp of flour. Came out amazing. I think without my additions it might not have been so delicious.

Rhubarb Strawberry Crunch

This is way too sweet. I made this because I like the tart taste of rhubarb with sweet strawberries together- this was just sweet. Not memorable or at all interesting.

Lime Chicken Soft Tacos

This was just ok. I did it in the slow cooker and omitted the sugar and oregano, added cayenne and cumin as per other reviewers suggestions. With all the toppings it came out well but it wasn't spectacular. I will try it on the stove when I have more time.

Peanut Butter Noodles

This is pretty good. I added jalapenos and cayenne in addition to crushed red pepper and chili paste. because I like it spicy. I will make this again, but I want to play with the ratio of noodles to sauce- I ended up with too many noodles, not enough sauce probably through my own error.

Curried Coconut Chicken

This recipe was good but if I hadn't added extra spices it would have just tasted like tomato sauce and coconut milk without much seasoning. At the end of cooking I added a handful of red pepper flakes and some cayenne. The sweet coconut milk and the spice combo was great. EDIT- I made this again and added a jalapeno in addition to the cayenne and red pepper. Perfect. Broccoli and green peppers went along with it nicely.

Actually Delicious Turkey Burgers

A good burger. Next time I will grate the onion instead of dicing it to get it smaller- I tried chopping it finely but the pieces were too large and crunchy. I also subbed cilantro for the parsley because I prefer it, and added a little Worcestershire and hot sauce to the mix. Served with cheddar cheese on top and BBQ sauce.

Winter Lentil Vegetable Soup

This soup is a good staple that I frequently take to work for lunch. It's healthy and easy, but not the most interesting or exciting soup. I add a 4 oz can of tomato paste, and whatever other veggies I have, along with some cayenne.

Sarah's Applesauce

Amazing! I'd never made applesauce before and this turned out great. I used 5 apples, a little be less sugar and 2 tablespoons of cinnamon.... I put in too much cinnamon but that's my own fault. Still delicious.
