Gingerbread Torte

This is one of the best and most impressive cakes that I've ever made. I split the cakes into 9 layers total, so it looked pretty awesome. I would either (a) double the frosting recipe, since it comes out a little scant, or (b) keep the frosting the same, but fill the layers with lemon curd instead of frosting, so that the frosting will go further.

Old Fashioned Pineapple Upside-Down Cake

This is one of the best pineapple upside-down cakes that I've ever had. Hot out of the oven, or cold with a cup of tea in the morning, this only gets better the day after.

Red Enchilada Sauce

While not "authentic"...this is the best enchilada sauce I've ever tasted. I made it last week for the first time, and I'm currently cooking about a gallon of it right now to tuck away in the freezer. There is nothing more comforting in life than a cheese enchilada made with corn tortillas and red sauce. This is wonderful. I made Mexican rice at the same time as this, and just threw a cup of the sauce into the rice water while it was cooking. Delish. I'm doing the same this time around, except I'm using barley.

Ultimate Twice Baked Potatoes

I made a vegetarian version of this recipe last night for dinner, and it was delicious! The filling was a little soupy, and next time I would probably halve the milk. I nixed the bacon and green onions, and instead added chopped red bell pepper.

Irresistible Pecan Pie

The pie filling is terrific! However, the pie crust was really hard and crunchy, not flaky. I would have liked my regular pie crust better. But I will definitely be making this pie filling again. I hate it when pecan pies are nothing more than a sprinkling of nuts on top of a gelatinous goo, but this was delicious with nuts throughout a smooth buttery brown sugary filling.

Muffin Frittatas

I made a batch of these frittatas, individually wrapped them in plastic wrap, and then popped them into the freezer. I was looking for a quick but healthy morning meal. The frittatas weeped quite a bit after being microwaved the next morning, but maintained their shape and texture. Very good! I would probably use less cheese next time, and more vegetables. My only problem was that they were so small, that I could have eaten a few of them at once!

Banana Banana Bread

This banana bread was delicious, and easy to make. I love how moist it was. I used half white flour, and half wheat. Also, I was out of brown sugar, so I substituted with white. I think this is a pretty fool-proof recipe, even with these changes according to individual taste.

This frosting came out more like marshmallow fluff than anything else. It was tasty, but oh-so-sticky! It was difficult to wrap the cake afterwards.

This would have been a lot better if I had used Granny Smith apples, or another tart variety. I happened to use whatever was in my fridge, and while the outcome was good, it wasn't something I'd serve to guests.

Pillow-Soft Dinner Rolls

I made these rolls twice. The first time, I followed the recipe exactly, and they came out beautifully. The second time, I was out of white all-purpose flour, and so I used 100% whole wheat instead. They were rock hard, and very gritty. I'd like to try this recipe again, and maybe used 2/3 white flour, 1/3 whole wheat. I am adding this to my list of dinner "regulars".

Asian Lettuce Wraps

These lettuce wraps were an interesting experiment. I was searching for a recipe similar to the wraps served at PF Chang's. This was good, but not the same. The chicken mixture did NOT look appealing. I would not make this again.

Mexican Cucumber Salad

This was a nice summer salad, but it wasn't anything too special. I would probably make this again, but would likely cut the red pepper flakes in half. By the next day the heat from the pepper flakes had increased significantly, and the salad was inedible.

Mexican Beef Supreme

I hosted a book club meeting this weekend, and I made a Mexican-inspired meal to go along with our book of choice, set in Mexico. This recipe was delicious! I made a few adjustments for personal taste--I double the lime, jalapeños, and the salsa verde. I left it in the slow cooker for about three hours, and the meat was delicious and tender. I served it with toasted corn tortillas, sour cream, a side of cucumber salsa, and flan for dessert. What a hit!
