This casserole has seriously become one of my favorite casseroles of all time. It is inexpensive (hello, canned tuna) and sooooo very tasty! It came from my desire to revamp some of the recipes from my childhood. Everyone's Mom used Cream of Mushroom soup for just about every casserole they… MORE

About this Cook
I had gastric bypass surgery in 2004. I have since lost 160 pounds and discovered a love for good food. I have always cooked, but the flavors and quality or the food have become much more important to me. Since moving to Washington state in 2006 I have discovered the wonderful treasures of Northwest Cooking. I had never enjoyed fish like I do now and am always looking for new recipes. I have branched out into the blog world with my own food blog so I can share some of my own recipes and stories. I hope you will find it informative and fun!
My favorite things to cook
Any kind of fish, Mexican and Asian flavors. Love to BBQ with my boyfriend and we have been playing around with new rubs and BBQ sauces. I love Rachael Ray and all of her fun pasta and burger recipes. I have made some of my own twists to those and come up with meals that my family loves.
My favorite family cooking traditions
Not sure about cooking traditions. I live for the holidays and love baking cookies with the family at Christmas. I also love cooking with my boyfriend, he is an awesome sous chef!
My cooking triumphs
Learning to cook healthier for my family and not only losing 160 pounds myself but watching my son lose 50 pounds as well and gain a love for good food.
My cooking tragedies
Oh good Lord, I think there are too many to list!! One would be having a whole houseful of people here to have my "famous" chicken and dumplings. I was so caught in conversation and socializing that I forgot to turn the heat down when I dropped the biscuit down in the boiling soup and the liquid almost completely cooked away and the bottom was burned!! I was mortified to watch everyone still trying to eat it and pretend they liked it!

Dee's Roast Pork for Tacos
This an amazingly simple recipe and it is fantastic! I make home made taco seasoning and I did add more than the recipe called for, but the pork is soooo tender and falls apart with a fork. I am going to try this with a beef roast.

Honey Mustard Dream Delight Pork Chops
The flavors were good but HOT next time I am going to cut the cayenne pepper in 1/2. The mustard sauce was good but I don't think I got my grill hot enough so I didn't get the crust on it I should have.

Phenomenal Chicken and Pasta in Creamy Pesto Sauce
I cheated and used store bought Pesto because I was in a time crunch, but this is a fabulous recipe. I do want to make it with my own pesto next time though!
