About this Cook
I come from a family of Hamburger Helper and instant mashed potatoes. However, my adult life is so much different, to the point of being called a "freak" at work for my health-conscious food. I met the man of my dreams 9 years ago (while living in Germany), and we are still dreaming together. We are foster/adoptive parents (our home is currently without because they got married). I am super anal about recycling, which is not done well here. I can't stand waste of any kind: food, time, money, natural resources, brains, etc. I love traveling and usually go to different countries in the summer without my hubby.
My favorite things to cook
Healthy, feel-good meals, veggies, breads, and muffins. More organic, less instant. I like variety and all foods.
My favorite family cooking traditions
Eating and talking at a table together: one time, one place, if at all possible.
My cooking triumphs
Muffins and breads. Recently - homemade spaghetti sauce.
My cooking tragedies
I CANNOT consistently put meat in a pan and make it come out right. Too dry, too tough, too much time, not enough time. Even after all the tricks about the pan being the right temperature and everything. Maybe if I cook the exact same cut of meat ALL THE TIME...

Quinoa with Chickpeas and Tomatoes
I really liked this refreshing salad. Our 2-year-old didn't like the lime juice in it - I'll have to try something else as a substitute for it next time. I added onions for a crunch, and I likes someone's idea of adding avocados.

Caron's Kickin' Quinoa Salad
All of us (guests and kids) really enjoyed this! I like this new take on tuna salad. It would have been great as is, but I always end up modifying a recipe, so here goes: I added spinach (thawed frozen) to get some more super foods in. We were out of wasabi (DARN!), so I added dijon-style mustard and left out the lemon juice this time. I used only a scoop of mayo for that flavor and the rest was plain yogurt (no one can ever tell that I made it lower-fat - in any recipe using mayo). Thanks for the recipe, Caron! :o)

Quinoa Tuna Salad
This was a good, maybe somewhat bland if I hadn't added extras, base recipe. I added some horseradish mustard, onions, and celery to give it more crunch and make the taste more vibrant. I didn't measure the ingredients but tasted and added more to suit. This recipe is great that it can be modified to fit what I have on-hand. Thanks, Julie! :o)
