Rosemary Smashed Potatoes

This was an easy, delicious side that went perfectly with the beef bourguignon that I made as a main. Took the advice of reviewers, and instead of using the baking bag, I coated the potatoes with the oil and dry ingredients using a ziplock bag, put the potatoes on a baking sheet, covered it tightly in foil, and let it bake until the potatoes were tender. Worked perfectly. The only other thing I ran into was that the recipe was a little dry for my liking, so I added more sour cream and butter until it was to the consistency I liked. If I recall correctly, I had to add quite a bit more, but I like to have them rather creamy.

Beef Bourguignon I

I have always been a little daunted by Beef Bourguignon, but I took the plunge and made this recipe. I don't know what I was scared of, because it came together perfectly, and my entire family loved it, even those that claimed not to like recipes that included wine! I read a lot of reviews complaining that they dirtied a lot of dishes making it on the day of serving, and that the prep the day-of was more involved than they anticipated, but I didn't find either of these things to be a problem. There was plenty of time between steps to clean the dishes I'd used, and I allowed myself plenty of time for final-day cooking, so the entire meal was ready for dinner without any delays or after-meal cleanup. I served it with rosemary mashed potatoes and roasted asparagus spears in herbs-du-provence, with baked pears in an orange-maple sauce for dessert. Delicious!

PHILLY Neapolitan Cheesecake

A beautiful, delicious cheesecake that is pretty simple to make. It's a little time consuming, but definitely worth the effort! The only thing I did differently was I left off the white chocolate shavings and garnished instead with chocolate dipped strawberries. Fabulous!

Sopapilla Cheesecake

This is one of my family's favourite desserts, we make it all the time. However, there is just way too much sugar in the original recipe, I usually cut it in half, at least. Makes a perfect, fast, creamy dessert. It's also great if you have surprise company and need a quick dessert, as it bakes up really quickly, and is great when warm. Any leftovers (a rarity) are perfect as a breakfast pastry the next morning.

Autumn Cheesecake

I made this cheesecake for the first time for Thanksgiving. It was completely gone before I could even get a piece for myself! I've made it twice since then, and have received rave reviews ever since. It's definitely a favourite in my household, and I'd recommend this recipe to anyone that wants a great cheesecake for the cooler months.
