Moroccan Potato Bean Soup

Very tasty and flavorful. I used White/Northern beans instead of white kidney beans and several red potatoes but I think it still turned out fantastic. I docked one star because I think it was less of a soup and more broth-like but was perfect over rice. However, to be fair, I also didn't have 1/2 and 1/2 which would have added a thicker texture (plus kidney beans would have been thicker as well). I will definitely make this again.

Three Cheese Chicken Penne Pasta Bake

This turned out very well! I used the Mexican cheese blend instead of the Mozzarella and omitted the basil since I didn't have any. Other than that, it was a smash hit as I served it with some garlic bread and a fresh salad.

Seven Layer Tortilla Pie

I cannot say how many times I've made this. It's always a hit. Rather than seven layers, I tend to make 2 5 layer pies, because one of those layers will be filled with either corn or meat.

Cream Cheese Jalapeno Hamburgers

This was by far the best burger I've had in a very long time. I only used a 4oz. can of diced jalapenos but it seemed to do the trick. Even without seasoning it was fantastic. THIS is how a burger should taste!

Cocoa Oatmeal Cookies

Absolutely the best oatmeal cookies I've had by far, and yes I did add about a cup of semi-sweet chocolate chips which made this recipe simply superb!

Cheesy Potato and Corn Chowder

Absolutely scrumptous! I added some cilantro and turkey bacon and used one can of carnation milk, one can of corn and a can of creamed corn. I also omitted the celery, chiles and gravy mix. De-li-cious!

Butternut Squash Soup

Everyone loved this when I made it. I used 2 whole butternut squashes and when it came time to add in the block of cream cheese it worked well with the blending, but because it wasn't a thick enough soup for me, I tried to add more cream cheese, this time the container kind. I ended up with chunks of white speckles. But it was still phenomenal.

Potato Tacos

These were phenomenal! I used about 9 medium red potatoes and also added 1/2 a packet of powdered ranch dip as someone suggested earlier. For a dipping sauce I used peppercorn ranch dressing and for the second and third batch everyone wanted me to add tomatoes and lettuce then top it with the dressing rather than as a dip. It was so yummy, even the next day--I briefly nuked it then placed it in a toaster oven. This is definitely going on my list of things to make again!
