Cheesy Potato and Corn Chowder

I made this recipe exactly as stated except I added a few extra spices. I added salt, pepper, garlic powder, and chrused red pepper to taste. My family went on for days about this recipe. Definitely a keeper!

Slow Cooker Carnitas

The meat fell to pieced after cooking all day. Great flavor. The meat was a little too fatty for my liking so I cut all the fat off after it finished cooking. I sauted onion and bell peper with butter and garlic in an iron skillet unitl vegetables were tender. Cooked the meat in the oven at 400 for 15 min to crisp up the meat. Made fajitas out of the meat and veggies. Topped with salsa and sour cream. Fantastic recipe!

Spinach Enchiladas Verde

This is a great basic recipe for spinach enchiladas. I did make a few changes to fit my taste. I used flour tortilla shells because they fold better, heat them up for 20 sec before filling. I cooked the spinach for a minute and a half and squeezed the water out so that they wouldn't make the enchiladas to runny. I sauted a tablespoon of minced garlic in butter, then added 3/4 cup of onion and fresh mushrooms to the butter and continued cooking until the mushrooms were cooked. I boiled and shredded three chicken breasts. I sprayed the breast with butter, sprinkled salt, pepper, and crushed red peppers to taste. I doubled the sour cream mixture. Added a handful of black beans to the enchiladas as well. Rolled all ingredients up in tortilla shells and cooked as directed. Excellent turnout! My husband said that this was one of his favorite recipes and raved about it for days!

Chocolate Pecan Pie III

Outstanding recipe! Great twist to the typical pecan pie. I brought this pie to an auction at my church and everyone went crazy over it. I did add extra pecans to the reicpe, probably 1 cup to the pie itself, and put a cup of chopped pecans on top. Will definitely make again.
