Quinoa and Black Beans
delicious as is! I used fresh cilantro, cut fresh corn off cobs, and "made" the black beans from scratch (used about 1.5 cups of black beans and 3 ears of corn). At the end, after adding all the ingredients together, I kept it in the pot on very low heat to blend all the flavors together, for about 30 minutes, stirring occasionally. The sugar from the corn and the taste of the cilantro are in every bite. So good!

Alissa's Vegetarian Lentil Meatloaf
I loved the idea of this recipe, but it didn't work at all. I was so disappointed. I don't know what I did differently than those who were successful with it, and I'm a little bit jealous. :) I've had lentil meatloaf before and I was excited to find this recipe. I followed it as is, and after 2 hours in the oven it wasn't even set; the consistency was the same as when I first put it in the oven, it wasn't even edible. I don't plan on trying this recipe again, and will continue looking.

Spinach, Caramelized Onion, and Muenster Au Gratin Potatoes
This is wonderful: one of the best potato dishes I've ever eaten! Perfect the way it is, don't alter it until you've tried it as written. I made this the first time for my mom's birthday. She said it was 'divine' and that it now replaces her grandmothers Au Gratin Potatoes. Everyone I've made it for since has asked for the recipe. Soooo good!
