Butternut Squash Risotto

I used acorn squash instead of butternut and seasoned the squash with brown sugar and cinnamon. I omitted the wine (by accident). It's good, although not as flavorful as some other risottos I've had.

Sauteed Green Beans

Pretty delicious. I didn't use butter (wasn't necessary). I added feta cheese and sundried tomatoes. Before adding the green beans, I sauteed 1 minced clove of garlic in the pan for 30 seconds.

Libby's® Famous Pumpkin Pie

Crispy Oven-Roasted Rosemary Chicken with Sausage and Potatoes

Very crispy and delicious. Watch the amount of oil you use (I used less than the recipe asked for) to keep it healthy. Instead of bratwurst links, I used sliced hot dogs. Goes well with zucchini risotto.

Broccoli with Garlic Butter and Cashews

After boiling the broccoli, I mixed the other ingredients in a bowl, added cornstarch to the bowl, put the broccoli in a skillet over medium high heat and added the sauce. I doubled the sauce, but unfortunately used too much butter.

Teriyaki Chicken

I used boneless chicken thigh fillets, marinaded for one hour only, browned the chicken in a skillet with a small amount of sesame oil and roasted for 30-35 minutes at 375 degrees, basting with leftover marinade (which i boiled before reusing) every 10 minutes, and turning the chicken in teh roasting pan halfway through cooking. It was great!

Sweet Potato Pie I

Our guests loved it, I used this recipe exactly. I didn't have a mixer or blender or anything, so I made sure to get it as smooth as possible when mixing with a spatula. I followed the ingredients and the amounts exactly.

Cranberry Sauce

Very simple and very excellent. I used half brown sugar and half white sugar and cut the amount of orange juice used in half. I made sure to mash the berries with the back of a spatula as the sauce thickened and refrigerated overnight before using. The guests loved it!

Cranberry Pistachio Biscotti

Excellent recipe! Make sure to keep wetting your hands with cold water when rolling out the logs, it does wonders. You don't need to use that many pistachios. Try to buy pistachios that have already been cracked, cracking them takes forever! Try to not buy salted pistachios ... if you do, then maybe omit the salt from the recipe.

Rosemary Braised Lamb Shanks

Great recipe. Cook it for a long time (longer than the recipe recommends, like maybe 3 hours, so the meat starts to fall off the bone.) I tripled the amount of rosemary!
