Quinoa and Black Beans

I tried this recipe because I was looking for a heartier preparation of quinoa than the popular cold salads. It definitely fulfilled my wish! I was amazed by how flavorful it is, and super easy to make. I didn't have any onion, but I thought it still tasted great without it. Also, I used just one can of beans. Thanks for a great recipe, I can't wait to make it for my gluten-free friends!

Quick Italian Vegetable Soup

This was so good! I didn't exactly have the called-for ingredients, so I used two cans chicken broth instead of bouillon. I also used tomato pasta sauce in place of tomatoes, and added yellow squash and mushrooms for additional heartiness. Adding lots of the pepper made it enjoyably spicy!
