Double-Decker Fudge

This made a very, very sweet fudge which my friends could not keep their hands off! It was a bit too sweet for me - hence the 4 stars. Instead of pouring 1/2 of the cooked mixture into each type of chip, I "measured" half of the cooked mixture by using a ladle and simply counted 1 ladle into the choc. chips and 1 ladle into the peanut butter chips and kept going until it was all gone. I definitely liked the peanut butter fudge better than the chocolate overall.

Chocolate Brittle Surprise

Oh My God! This was absolutely delicious! I found that mine burned around the edges so I'll have to play around with the baking time. I also found that semi-sweet chips over-powered the pecans so I tried milk chocolate chips and toasted chopped almonds for the perfect match. I sprinkled the chips and nuts at the same time, waited a couple of minutes and then spread the melted chocolate with the nuts so that the nuts wouldn't fall off.

Microwave Oven Peanut Brittle

This made the perfect peanut brittle! I found that using roasted peanuts made the peanuts too dark and over-cooked for my taste so I tried it with raw peanuts and they turned out just right - golden brown, not too dark. I also used my VisionWare glass cooking pot for easier handling - it's much better than using a bowl. And yes, you do have to work fast when pouring the brittle onto a cookie sheet. One more thing, since it's winter time, I put the brittle outside on my porch to cool it quickly (it was a clear day, no flurries!).

Cinnamon-Roasted Almonds

Delicious nuts! I gave these to my family for Christmas. I also doubled the cinnamon to 1 tsp. The only thing I wish for is that more of the cinnamon coating stay on the nuts and not to my cookie sheet (I used a teflon coated sheet with vegetable spray - it still got stuck).

Butternut Squash Soup

This is an incredibly rich tasting soup. Wonderful, interesting flavour with the cream cheese. I only used 1/2 of an 8 oz. block of cream cheese and will try 1/4 or 1/3 next time as I still found it too rich for me. I also cut the butternut squash in half lengthwise and roasted it at 375 F for 45 min. so that I wouldn't have to go through the trouble of peeling and chopping raw butternut squash.

Oatmeal Butterscotch Cookies

Yummy cookie! I used 2 cups of butterscotch chips (to finish off the package) and 1 cup of chopped pecans (because my husband loves pecans) and they turned out great.

Apple Crisp II

Delicious! Simple ingredients make this a wonderful homey dessert. In the topping mixture, I added a few "shakes" of cinnamon. I serve it warm with butterscotch ripple ice cream.

Cajun Seafood Pasta

This is definitely a keeper. It's restaurant quality and my husband and I absolutely loved it. I made half the recipe for the 2 of us and had extra left over. I used a bit less of the crushed red pepper than called for and no white pepper (didn't have any) and it was just the right level of "hotness" for me - mild tingly sensation on the tongue, not burning hot. I cooked small raw scallops in the sauce for a few minutes and then added pre-cooked shrimp at the last moment. I also used old cheddar cheese instead of swiss. It turned out great!

RamJam Chicken

This recipe was a hit! My boyfriend said it was the most tender chicken he ever had. I had some leftover chicken (raw) which I marinated and put in the freezer and used at a later time - still great. I threaded veggies like mushrooms, peppers and zucchini along with the chicken and it was excellent.
