This made the perfect peanut brittle! I found that using roasted peanuts made the peanuts too dark and over-cooked for my taste so I tried it with raw peanuts and they turned out just right - golden brown, not too dark. I also used my VisionWare glass cooking pot for easier handling - it's much better than using a bowl. And yes, you do have to work fast when pouring the brittle onto a cookie sheet. One more thing, since it's winter time, I put the brittle outside on my porch to cool it quickly (it was a clear day, no flurries!).
