Filipino Beef Stir-Fry

I thought this was an excellent dish. I used a little over half the meat and just eye balled the veggies. I don't think you can go wrong with this recipe!

Golden Yam Brownies

These were excellent, I couldn't stop eating them! I used 1/2 the amount of white sugar and mixed in some whole wheat flour instead of using only white flour. The result was a longer baking time and a slightly nutty flavor with the whole wheat flour.

Fennel and Watercress Salad

This was excellent! I live by myself so I actually made 1/6 of the recipe. Makes quite a bit for a single gal but I kept the dressing in a jar instead of putting it all on the salad as I knew I'd be eating it the next day.

Roasted Garlic Cauliflower

Caramelized Brussels Sprouts with Pistachios

Browned Butter Vegetables with Almonds

Made this last night and loved it! Never heard of garlic pepper so I just sprinked in some pepper and garlic powder. Added a few sliced mushrooms since I had that on hand, next time I would add more cause I love mushrooms. A versatile dish that I would try with different veggies in future. I only used 1/4 cup butter and it tasted nice'n buttery. I used almonds and pecans. The nuts definitely make the dish stand out.

Baked Apricot Chicken

This is a wonderfully simple and easy recipe. I used 3 chicken legs, took the skin off and separated the thigh from the drumstick. I used 1/2 pkg of onion soup mix, and eyeballed 1/2 cup low fat California dressing and 1/2 cup of crabapple jelly as this is what I had on hand. Delicious!

Creamy Scallop Chowder

Thank goodness I read the reviews first and learned that you really can't go wrong with this recipe! I didn't have any milk, mushrooms or swiss cheese on hand so I used evaporated milk, creamed corn and diced potato, carrot and red pepper for colour. I used grated Fontina cheese and blended it right into the soup. I did need to add a bit of water to thin it bit. Then I threw in some fresh chives and thyme near the end. The result? A wonderful tasting and colourful chowder!

Roast Leg of Lamb with Rosemary

This is a heavenly dish! I have never cooked a lamb leg before and this was outstanding! My husband was very, very impressed. I added 2 cups of water to the bottom of the pan as suggested by others, cooked it at 400F covered for 20 min. and then at 350F for 1 hr 45 min, turning the meat over every 15-20 min. I did not tent it with foil since the baking dish came with a lid. For gravy, I added a bit of red wine and some corn starch mixed with water. The gravy was delicious but a little too strong tasting so next time I will water it down some. Excellent over mashed potatoes. I'm curious to try it next time with lemon juice and balsamic vinegar in the marinade, openning the leg up and putting the marinade in the middle, marinating for 2 days instead of 1 and then tying up the leg before baking. What can I say, I read a lot of the reviews and plan to combine several of the great ideas submitted by others!

Deep Dark Chocolate Cake

This cake is absolutely delicious. It's the kind of cake you'd find in a good restaurant at 5 bucks a slice, in my opinion. The cake is not overly sweet and the icing compliments it perfectly.

Caramel Filled Chocolate Cookies

Lordy, lordy, lordy...how could I give anything but 5 stars for this cookie. I baked them yesterday and thought about them all afternoon today at work. I actually didn't have enough choc. covered caramels (used Reisens) and made a few without. They were still good, but the ones with the caramel are fantastic!

Seafood Lasagna II

I found this to be just so-so. The taste was too salty from the canned mushroom soup. I used oven ready lasagna noodles and the bottom layer turned out too dry. If you have to try this recipe and you're using oven ready noodles, I recommend adding more milk to the crab/shrimp mixture and put some on the bottom of the pan before the first layer of noodles. I'm still on a hunt for a seafood lasagna that will "wow" my taste buds.

Michelle's Zesty Hummus-like Spread

This was delicious! I used 2 different types of salad dressing (to finish up the bottles), one of which had roasted garlic in it (so I omitted the garlic powder), the other was a balsamic vinagrette. I found that the salad dressing made the dip too sour, so I blended the whole red pepper instead of just 1/2 and it was perfect (with a nice slightly sweet taste). I also omitted the sesame seeds since I didn't have any. My husband *hates* hummus, but liked this one as you could not taste the chickpeas. This is a versatile dip, you can make all kinds of adjustments to your liking.

Streusel Apple Coffeecake

This was excellent! Way better than store bought. It tastes like there's apple pie filling in the middle. I used margarine because that's what I had on hand. I also used two 9x5 loaf tins because I don't have a bundt pan and baked for an hour. I found the walnuts slightly bitter so next time I'll use pecans.

Can't Get Enough Caramel Cookies!

These were really easy to make and tastey, too. I used margarine and melted it in the microwave oven and then threw the other ingredients in, except for the salt (as per other reviewers). After it was baked, I put semi-sweet chocolate chips on part of it, thinking that it might be better with chocolate. I was wrong. The semi-sweet chips overpowered the oatmeal bars. By the way, mine came out nice and chewy. I wish I knew why some people ended up with crumbs!

Cream of Spinach Soup

This was a really good soup. I changed the procedure, though, since I didn't like the idea of using 2 pots (means there's 2 pots to clean), so I just used 1 pot. I melted margarine and added flour, then added milk a little at a time,stirring to blend. I added water and then some undiluted chicken concentrate and the dried onion. I used pre-washed baby spinach instead of frozen spinach and seasoned with salt and pepper. Then I pureed the mixture using my hand held blender and produced a wonderfully nutritious soup.
