Chocolate Macaroons I

I made these because 1) I had extra egg whites on hand and 2) my fiancé loves macaroons. I am not a macaroon fan but these are amazing! I suppose it's because I've only had store bought ones that I found to be fake tasting. These are delicious. I wasn't sure if I was supposed to use sweetened coconut or unsweetened, so I used about 1/2 and 1/2 and then put in about 1/2 the sugar too. This is a definite keeper for me.

Mediterranean Lentil Salad

I thought this was a very tasty lentil salad. I used regular cooking onion since that's what I had on hand. Will definitely be making it again!

Jean's Homemade Chicken Noodle Soup

My fiance came down with the flu and I wanted to make a soup that had ginger in it. I really just eye balled everything. I had a small piece of chicken breast (maybe 1/3 of a pound) in the freezer and couldn't be bothered with the step of frying it with ginger so I just boiled some water, added organic chicken bouillon, the chicken breast, slices of ginger and a couple of cloves of garlic. Chopped up the chicken once cooked, and threw it back in with carrots and celery. I did not measure anything. I didn't have any noodles, so I left them out. This is a wonderful soup for a cold!

Jay's Signature Pizza Crust

Lemon Blueberry Bread

This was absolutely delicious. My boyfriend and I couldn't stop eating it. I made the glaze but kept it on the side in a bowl and we simply drizzled individual slices with the glaze. Definitely a keeper!

Pasta with Baby Broccoli and Beans

Made this with a 340g package of whole wheet penne because that is the size it comes in here in Canada. And I used broccoli instead as I could not find broccolini. At first it tasted kind of bland, so I added a bit of salt and more red pepper flakes. I found that this dish grew on me to the more I ate it.

Oriental Pork Cabbage Stir-Fry

I thought this was excellent and very homey. I added a pinch of red pepper flakes, a dash of white pepper and also a chopped green onion and 3 minced garlic cloves. I even used olive oil because that's all I had and it still tasted great.

Fried Rice with Cilantro

This rice was awesome! After reading a few of the reviews, I added a couple of eggs which I beat and fried up first and took out until I put in the rice. I also added crushed peanuts at the end. I used shrimp instead of chicken. The result was a fabulous rice dish good enough to serve company. Quite reminiscent of pad thai but much less labour intensive.

Sour Cream Corn Bread

I made this and omitted the pimentos and onions because I didn't have any on hand. I added some shredded cheddar cheese, 1/2 cup of frozen corn (defrosted), chopped fresh chives and a pinch of red pepper flakes. I found the overall texture to be denser than I prefer and I'm not sure if it's because of the changes I made. Still, I found myself eating and eating and eating this... I guess it grew on me!

Poppy Seed Bundt Cake II

This was a really good & easy cake to make. I actually made 1/2 and put it in a loaf pan (I just put the package of cake mix on my food scale and dumped out 1/2 the weight into a bowl). I added 1/2 tsp. of lemon extract (and halved the other ingredients). It's not really designed to be a loaf cake as it was extremely moist and fluffy and when slicing sometimes the slices would fall and break in half (usually loaf cakes are firmer). Still, it was very good.

Sauteed Apples

This recipe is wonderfully easy and very tasty. I used 4 small apples picked from a friend's tree (very tart) plus one large apple from the grocery store (less tart). I followed the suggestion of only using 1 tsp of cornstarch and added a dash of nutmeg. It tasted great with the oatmeal pancakes (also from this site).

Chocolate Dipped Bing Cherries

After reading the reviews about the difficulty in pitting the cherries, I decided to simply melt chocolate and dip the cherries in them, skipping the whole sugar and vanilla extract part. They tasted great! I used milk chocolate on half and then tried semi-sweet on the other half. I liked the milk chocolate better while my boyfriend liked both equally. Yes, you do have to spit out the pit this way, but it wasn't a big deal for us.

Chickpea and Quinoa Salad with Lemon and Tahini

I loved this salad! Added some chopped red pepper for colour. Also used a 19 oz can of chickpeas instead of going to the trouble of cooking dried chickpeas.

Mediterranean Stuffed Chicken

This was excellent! Very tasty and the saltiness of the filling from the feta cheese went extremely well with the chicken. It took about 40 minutes to bake, though as the chicken breast halves were quite large.

Apple Crumble Pie

Excellent and easy to make! I was very happy with the results. I followed the advice of another and mixed 1/4 cup flour with the apples and then tossed in 1/4 cup brown sugar and 1/4 cup white sugar along with the cinnamon.
