Cheddar Beef Enchiladas

Made this for My inlaws+ family for my daughters 7th birthday. Only change I did was mix salsa with a can of cheddar cheese soup and spread on top, then topped with a bit of grated cheese. Great accompaniment to the "Outrageous Warm Chicken Nacho Dip" and the "Absolute Mexican Cornbread", both from this site. Everyone raved!

Outrageous Warm Chicken Nacho Dip

Made this for My inlaws+ family for my daughters 7th birthday. Served it with taco chips for dipping, and cooked in my crockpot for 4hrs. It was fantastic! Great accompanyment to the "Cheddar Beef Enchiladas" and the "Absolute Mexican Cornbread", both from this site. Everyone raved!

Lemon Icing

Great recipe when you add 1.5 tbsp milk and decrease sugar by 1/4 cup. I found that to ice a 2layer 9" cake, you need to 1.5 teh receipe as there was BARELY enough to ice the cake.

Peach Cream Pie I

tasted good, but the mess it made was aweful. My smoke alarm went off when I took it out of the oven. Next time, I'll try mixing the peaches with the sugar mixture before putting it in the pie shell.

Strawberry Swirl Cake

I made this for my niece's 1st birthday. Everyone loved it, and the icing was different, but excellent. Taste was reminiscent of a cream cheese frosting. I agree though, swirling a cake is easier if your pour the white in, then dot the strawberry around it, then swirl with a spoon.

Rich Chocolate Frosting

I halved this recipe, and used it on a 4 layer 9" round cake, and had exactly the amount I needed. Texture was great, not too sweet, just perfect!

Honey Wheat Sandwich Rolls

I made this recipeinmy bread maker. It tasted great, smelled wonderful, but was a bit tough, and the crust was very hard (even on the light setting on my breadmaker). I will make this again as the buns it suggests and I'm sure it will be wonderful!

Maple Whole Wheat Bread

My son was recently diagnose with a sugar allergy, so now I've had to make my own bread, and this recipe is a HIT with everyone! I used 2 cups wholewheat bread flour, and 1 cup white bread flour. Nice and soft bread, including the crust. I agree with other cooks, that you can't taste the maple syrup, but it will be my bread recipe from now on!

Chewy Granola Bars

My 8yr old son was just diagnosed with a sugar allergy. I made this recipe but without the chocolate chips. I then divided the mixture in half and put raisins in one half, and coconut with dried apricot pieces in the other, then baked each half in a 9x9 pan. the kids LOVED them. Thanks for saving my sanity in our new sugarless diet!

Sticky Apple Biscuits

I made these in a 9x13 pan as suggested, and they turned out great, except they flopped over sideways. Next time, I would use a 7x11 pan so they would all be touching to hold them up. Great flavor!

Best Chocolate Chip Cookies

My 6 & 8 year old kids made this with themselves. I only supervised (have to make sure no egg shells made their way into the cookies!) Not only was this a very easy recipe, it is excellent! We divided the batter in half. My daughter put chocolate chips and m&m's in her half, and my son used raisins and toffee bits in his half. BOTH have been rated a 10!

Oatmeal Banana Raisin Coconut Cookies

Loved this recipe. I made it for my Dad, who we call "The Cookie Monster" and he loved them! I doubled the amount of spices, added 1/2 cup of chopped dried apricots, and used mashed bananas as well. Yummy!

Crazy Cake

Awesome cake for those with Egg Allergies! My mom made this same one when I was little but it was called "Wacky Cake". Tastes awesome! I added about 1/4cup more cocoa just to punch up the chocolate flavor.

Sandy's Chocolate Cake

I made this cake for my Mother-in-laws birthday. I used a heart shaped cake pan, and ended up with 4 layers. Inbetween the layers I put a layer of those chocolate mint thins when the cake was warm so they could melt slightly before putting the next layer on top. This is by FAR the most delicious chocolate cake I've ever made, even without the mint, and I've made ALOT.

Lemon Yogurt Muffins

I loved this muffin! I added 1 cup of dried cranberries, then used one lemon (grated the rind and added all the juice). It worked out to 2tbsp of lemon juice, but it was Fabulous!
