The Best Rolled Sugar Cookies

Reviewed: Dec. 6, 2011
Delicious and easy! I recommend dividing batter out as you are rolling it, leaving remaining batter in the fridge until you roll it. I teach a baking class to kids age 6-11 and pre-made enough dough for 15 dozen cookies for our church service. I baked half of them plain, for them to paint with colored icing sugar, and left the rest for them to roll, cookie cutter and sprinkle. They had a blast, and enjoyed "testing" the cookies before painting them.

Mountain Apple Cobbler

Reviewed: Oct. 11, 2011
I teach a baking class to kids age 6-11, and not only was this super easy, they loved it! Only suggestion is make sure the baking pan is big enough that the rolls are spaced out enough that the liquid can cook and evaporate. I 1.5'ed the recipe, but squished into a 9x13...Liquid was still there and bottoms were a bit gooey. Kids still loved it though!

Marshmallow Fondant

Reviewed: Nov. 30, 2010
I'm reviewing the making process only as I have my fondant in the fridge now and I'll update it after I've used it. I found this very easy to make for my first time fondant making! For those who aren't sure how many cups to use: 16oz bag marshmallows =10 cups; 2lb icing sugar =8 cups. I needed smaller amounts of colored fondant and divided this into 5 batches, making each separately. (perfect for accent colors on your cake or cupcakes). Use 2 cups marshmallows, 2.5tsp water, 1/4 tsp vanilla and 1.5cups of icing sugar for each batch. the butter, I just put a little on my fingers when first kneading. I added the color in while mixing, and it worked great! Cant wait to make my jungle cupcakes with this!

Chocolate Mousse Cake

Reviewed: Oct. 5, 2010
I did a combination of receipes, as i have my fav. chocolate cake receipe already. I used this for the mousse receipe and it tasted FANTASTIC! I would have Rated it as a 5 star, but the whole cake (made 4 layers of cake, 3 layers of mousse) wasnt able to hold its form at all. I used the outside part of cheesecake pan to put around the whole cake to hold it up. Even being in the fridge for 18hr, when the metal form was lifted off, it started sliding. (I now know why when you order Chocolate Mousse cake, they are individual and have the clear plastic form on the outside holding it together)

Stuffed Green Peppers I

Reviewed: Mar. 29, 2010
Like others, I will rate this 4 instead of 5 because of the changes I made. VERY TASTY WITH THESE CHANGES: Taco seasoning with burger and onion; Tomatoes with italian spices (save 1/2cup for sauce); Add- 1cup uncooked br. rice, cooked separately. Over top, i used leftover spaghetti sauce, 1 can tom soup, rest of tomatoes, and Mrs. Dash red pepper blend. This stuffed 5 yellow peppers, cut in half.

Easy Chocolate Bundt Cake Glaze

Excellent flavor, super easy, and lots left over. Made for my boss's bday chocolate bundt cake. only made 3/4 of recipe (scaled to the amount of milk in the can), and still had about half left over. Will store in fridge and warm to use on my next cake!

Cheddar Beef Enchiladas

Reviewed: Jan. 3, 2010
Made this for My inlaws+ family for my daughters 7th birthday. Only change I did was mix salsa with a can of cheddar cheese soup and spread on top, then topped with a bit of grated cheese. Great accompaniment to the "Outrageous Warm Chicken Nacho Dip" and the "Absolute Mexican Cornbread", both from this site. Everyone raved!

Lemon Icing

Reviewed: Aug. 25, 2009
Great recipe when you add 1.5 tbsp milk and decrease sugar by 1/4 cup. I found that to ice a 2layer 9" cake, you need to 1.5 teh receipe as there was BARELY enough to ice the cake.

tasted good, but the mess it made was aweful. My smoke alarm went off when I took it out of the oven. Next time, I'll try mixing the peaches with the sugar mixture before putting it in the pie shell.
