Slow Cooker Macaroni and Cheese II

My favorite recipe. EVER. Used skim milk and switched out half the cheese for Velveeta. Never pre-cooked the noodles before adding them and cooked on high for about 3 hrs in the Crock. Added salt, pepper and paprika. Yuuuuuuum

Key Lime Cake II

Classic Bran Muffins

Absolutely delicious! I used whole wheat flour and I used applesauce instead of oil, no raisins, and made a buttermilk substitute with skim milk and vinegar (Google it). So tasty and low calorie this way (about 110 calories per muffin).

Easy Granola Bars

Probably one of my favorite things I have ever made! They are definitely going to be a staple at our house now! I used regular oats--not instant, and opted out of the cranberries, choc chips, and coconut. I used almonds, dates and raisins--about 3.5 cups worth. And I also used the skim condensed milk. I cooked them on a Pam sprayed Silpat mat, and they didn't stick a bit. I cut them within 5 minutes, but didn't take them out till completely cooled. They turned out so hearty, chewy, sweet, and delicious! This gets 6 stars in my book!

Chocolate Cheesecake I

Deliciousness!!! We did make several changes. To significantly reduce calories, I used 2 packages of fat free cream cheese and one package of 1/3 fat cream cheese. I have made it both ways, and with all the sugar in it, you don't even notice the fat free cream cheese used!! I did opt to use the sour cream top (again with reduced calorie cream cheese), and also put crushed oreos over the top of that! Couldn't be a more rich, delicious chocolatey dessert! I also only wanted to make a pie, and not the full cheesecake. I used a premade graham cracker pie crust, and only ended up using about 2/3 of the mix. Baked at 350 for about 45 minutes. Our staple Thanksgiving dessert!
