Cracked Sugar Cookies I

Savory Slow Cooker Beef Tips

Family loved it! Being busy we tend to get into a rut with meal planning, so decided to try this. Made it as written, except left out the mushrooms, since all my guys don't like them. Everyone loved it. Cooked rice and added peas at the end, so we had a veggie. Definitely will become part of the rotation! Thanks so much!

Uncle Bill's Chicken Strips

My family loves these! Instead of pouring the butter on top, which I found too difficult to spread evenly, I put some olive oil in the bottom of a foil-lined pan. Works beautifully for us!

Fudgy Brownies I

This is my go-to brownie recipe. It's so easy and has never failed me. I love that I can make it in one bowl, with two measuring cups. Makes clean-up really easy, too! Even my 8-yr-old can make it by himself,

Baked Flounder with Panko and Parmesan

I didn't have panko crumbs, so used Italian bread crumbs instead. Delicious! Definitely a keeper, though found the topping to be too much, will cut in half next time.

Breakfast Brownies

Kids said they were too dry and refused to eat them; hubbie thought the oats were too "hard"! He and I enjoyed the flavor; I did add the 1/2 cup cocoa for a chocolate touch. Might try again, but will probably cook or soak oats to soften them and double egg & milk for a moister brownie, I hope! If I do make them again, will report back. ;)

Una's Cheddar Beer Bread (bread machine dough cycle)

I was looking for something to do with a bottle of home-brewed beer which hadn't carbonated properly and found this. My husband was thrilled with this bread. I don't have a bread machine, so made it with my regular, old-fashioned method and it came out great! Thanks so much.

Slow Cooker Carnitas

The minute I started to braise the meat, the kids were telling me how good it smelled and asking when we could eat. Like others, I doubled the spice mixture and it was wonderful! In the interest of time, since I forgot to set it up in the morning, I cut the meat into 1"-2" cubes, put on the spice mixture and braised it, after which I put it in a pressure cooker, along with stock and bay leaves, for 30 min. Definitely a keeper!!! Especially thankful for my pressure cooker, too.

Chicken and Spinach Ravioli

Notes: do NOT layer the ravioli while making them and keep some space between individual ones; any part touching WILL stick together! The family loved these; my son thinks we should make them for everyone at Christmastime, too. Takes some time, but definitely worth the work!!! Had lots of fun making them. Thanks for the great, easy recipe.

Basic Flaky Pie Crust

This is the same recipe I've been using my whole life. It's even pre-printed in the front cover of my cookbook. When rolling out, I use plastic wrap, rather than waxed paper, as I find it easier to work with and not prone to tearing. I also fold and store the plastic in my freezer between times; I find it even easier to use when the 2nd or 3rd time around! For my large double-crust pies, I put two approx. 15" lengths of plastic wrap on the counter, overlapping them an inch, to give a bigger work area. I then put the crust, then two more lengths, turning so the "seam" is perpendicular to the one on the bottom. It's much easier to turn over and around when rolling out.

Terry's Texas Pinto Beans

Absolutely awesome! Definitely my new go-to recipe for beans! YOU HAVE TO SOAK THE BEANS, EITHER OVER NIGHT OR ALL DAY!! Then, discard the soaking water and use fresh for cooking. Really cuts down on the flatulance. I usually do these in my pressure cooker, for 28 minutes.
