Swedish Meatballs I
What would we do without condensed soups?! The sauce in this was so good and no one would know how easy it is. I made this entire dish pretty true to recipe with few minor modifications. I thought it turned out great but I may experiment more with the meatballs for more of a flavor pop next time. Served this with mashed potatoes and it made a great comfort meal for a cold winter day.

Creamed Spinach II
I started with a roux of butter, garlic, onion, and flour, then added the soup and spinach and cooked for about a minute and then threw in a handful of shredded parmesan, and a 1/2 inch slice of cream cheese. Since I prepared this before dinner I put it in a casserole dish and sprinkled Italian bread crumbs, parmesan, and asiago on top and put it in the oven for about 10 minutes. It was pretty good. It didn't blow my mind but I suppose it would take a lot cheesier and fattier recipe to do that. This one was still moderately healthy so I thought it was a good compromise.

Low Sugar Mocha Nut Cake
Uhh... it was bad. *shudder* I followed this recipe to the letter but then cut it in half with a leveler, filled it with sugar free chocolate pudding, and frosted it with a mocha buttercream frosting. The only good part was the frosting (which was the sugary part that my mom couldn't eat). It was extremely dry even though it sucked up all pudding filling, and it tasted like chocolate flavored baking powder. Part of me wants to make a bunch of revisions and try it again, but I don't even think it's worth it. I spent so much time making and decorating this for my mom's birthday and it was so disappointing. Oh well, it's the thought that counts, right?
