Vicki's Hush Puppies

I gotta say; the five stars is not exactly for the true recipe; so I hate to give it FIVE; but my rendition would have gotten TEN stars! First; I didn't have self rising flour OR cornmeal. Second; I completely forgot about the onion; (duh) although would have minced it as one person suggested. I halved the recipe cause there is only four of us; and it makes a LOT of hush puppies. I made about 20 hush puppies with half the recipe. I used 1/2 cup flour, cornmeal. 1 egg; about 1/3 can creamed corn. 2 tbsp of sugar. Pepper, salt and cayenne pepper to taste. *approx 1/4 tsp cayenne*. It was a bit moist so I added just a touch more cornmeal. OH! And the self-rising situation? I used about 2 tsp of baking powder to ensure a light and flaky puppy. IT WORKED! My husband HATES anything with corn in it; especially creamed corn.. he ate 10 of the puppies himself! Used tartar sauce from this site. I don't think I've ever tasted a better puppy! THANK YOU SO MUCH!

Cream Puffs

Excellent cream puffs, light and fluffy, SOO easy to make. BUT-they fell almost flat *MOST OF THEM* after coming out of oven. Can't figure out if it was the ingrediants, or what they DO!! Filled with handmade whipped cream and topped with chocolate sauce, sprinkle of icing sugar on top. Makes your taste buds melt, and yet it is NOT heavy and rich. Very nice dessert. Made TWO batches! Will make again. Anyone else have the "falling problem"? Maybe MORE time in the oven needed?

Light Oat Bread

Baked exactly as recipe stated-VERY light, tasty, rave reviews with company. Slightly sweet taste, which I enjoy, would have made excellent croutons or stuffing pieces, but there wasn't any left! No after-yeast taste either, will make again!

Prosciutto Wrapped Asparagus

OMG, this is SOOO good. I use my own variation now, as I've made this so often. Fresh asparagus, snapped at the ends, coated in oil, and spices, then baked after wrapping in prosciutto. The saltiness really compliments the dish. A new -now old-favourite!

Fish Tacos

Just used the white sauce and had haddock and hops fish already cooked in oven. Used white sauce, fish, lettuce and onions on a flour tortilla. O M G it was sooo good! Yes, spicy.. will cut it with sour cream for hubby. But YUM OO. Will try the batter like everyone says. I didn't change the white sauce recipe AT ALL!

Old Fashioned Onion Rings

I followed the recipe; EXCEPT I double dipped. First time I made it I used skim milk, but dipped in flour *mixed with seasoned salt* then in milk again before dipping in bread crumbs and seasoned salt mixture. The second time I made it I used half and half and an egg. Still double dipped for this glorious thick outer coating. No special ideas on how to make it neater-it's really messy. But my hubby said, "These are the best darn onion rings I've ever had". He admitted he wasn't a big fan of onion rings til I made these. I used sweet yellow onions-which didn't make me cry. Pain in the butt to make-would be better made ahead of time-suggest thicker cream/milk; and double dip! Thanks!

Garlic-Lemon Double Stuffed Chicken

Ooo my. I used minced jarred garlic. Used bottled lemon juice. Cooked exactly as suggested. Sauce was perfect, a little lemony, but not too much. Nice crunchy coating. Made with garlic butter rice and broccoli with garlic and toasted pine nuts. The perfect meal. Used the spreadable cream cheese *might be worth a try to use the herbed cream cheeses!* and shredded medium cheddar cheese. YUM!

Grilled Salmon I

The smell was divine when baking. Used oven at 400 degrees and since it was a thick fillet, went 25 minutes. Used the leftovers to make Salmon Dip and the hint of soy and ginger made it phenomenal! Kids even liked this one! Thanks

Creamy Rice Pudding

Had leftover Basmati rice, already salted with some flakes of pepper.. and I thought.. oh well.. well.. yum yum yum! Used 1.5 cups of skim milk and near the end added .5 cup of heavy cream. At first didn't think it was going to thicken, and worried the egg would cook and scramble in the mix, BUT oooo it was perfect! Used real vanilla bean seeds and cooked the empty bean with the rice and milk for a while. Then removed it. It's cooling on the counter as we speak and I have a SMALL bowl in front of me still hot while I scoop it in my mouth. YUM. Oh, no raisins.. ick. PERFECT!

Croutons

I used leftover dried up foccacia bread with a hint of ?rosemary? Lovely texture. As decribed, heated with butter and garlic, then 350 for 15 minutes. OOOO my god! SOOO good. I added a touch of salt as my butter did not have any. *Bad, I know, but I like salty stuff!*

Butterscotch Bread Pudding

Used less brown sugar than was called for.. butterscotch chips sweet enough. Came out perfect! Used SMALL loaf of french bread, torn to bits. Used 3 eggs, less milk to compensate for less bread. Vanilla and butter.. PERFECT.. kids eating for breakfast *what kind of mother am I??* and going.. mmmmmmmmmmm sooo good!

Italian Salad Dressing

OMG delicious! Used less sugar (preferred taste), used half balsamic and half cider vinegar, no water but other than that the same! For a bunch of NON-salad eaters to request this dressing at a meal is HUGE! It has a lovely flavor, Cudos and hats off!

Pita Chips

OMG made these a long time ago to go with homemade hummus. Followed the directions exactly including finding the elusive chervil.. didn't *still don't* know what that is. But don't leave it out! And don't try to skip steps by just brushing with oil then topping with spices. Doesn't work to skip that important step. FABULOUS one big hit at a party with hummus! YUMMY!

Broccoli with Garlic Butter and Cashews

Janet's Rich Banana Bread

Believe it or not, but have made this five times since Thursday and its only Sunday!! First time, made as directed EXCEPT no chopping of bananas, mashed is our preference.. tried leaving a few large chunks but as someone mentioned they kind of turn a weird color and don't really make it better, just weirder. The second time I made it I ran out of sour cream and used same amount *1/2 cup* of vanilla yogurt. My husband went crazy over the first one, but he went ape poop over the rest of them. He's had it for breakfast, lunch and dinner AND dessert. Not too sweet, very moist and GREAT flavor. Haven't tried more bananas yet, don't want to mess with perfection! Thanks!

Absolute Mexican Cornbread

I've had a few different types of typical corn bread and this is by far the best, most moist corn bread ever. Once, didn't have green chilis available, so tried jalepenos *chopped small* and I had some rave reviews with that too. SOO yummy.. not too sweet, rich and flavourful. An absolute must for bringing to a pot luck supper for friends!

Roquefort Pear Salad

Awesome salad! Can't say enough for the flavours really worked together. Sounds weird, but tastes delish! Husband didn't like it.. but it's kind of a fru-fru salad.. my mom will LOVE it!
