Oatmeal Peanut Butter Cookies

ABSOLUTELY INCREDIBLE! I subsituted 1 cup of butter instead of the margarine and shortening and it made the PERFECT cookie. THANK YOU THANK YOU.. deeeelicious! I added chocolate chips, peanut butter chips and white chocolate chips to the occassional cookie for a nice treat! Thanks again!

Amazing Butternut Squash

My family absolutely detests squash, but I love it, AND it's good for you.. so here I went, and tried yet another squash recipe.. *you should have seen the look in my husbands eyes*... and to top it off I didn't realize that the friends we had over for dinner also disliked squash.. well.. they all tried it just to please me... and they LOVED IT! I didn't use the FULL amount of mayo, just cause someone said they thought it was too much.. but OH MY! yummy! Nice for haters and lovers of squash.. definately a winner! THANKS!

Buttermilk Pie IV

OH MY GOODNESS! I have NEVER had this pie before. It was like a combination of butterscotch and vanilla and melt in your mouth GOOD! The only thing I wasn't sure of was whether or not I should pre-bake the crust... I did not.. and it turned out SMASHING! Anytime I have leftover buttermilk from my famous pancakes, I am most certainly going to make this pie again and again! THANK YOU!

Strawnana Bread

It's taken a long time to find a really good muffin mix. This one made 26 medium muffins with good size caps. I just chopped the bananas and strawberries to give some great texture. I left out nutmeg, orange zest and nuts as a personal preference, and added a splash of vanilla extract. It took about 32 minutes at 350! YUM YUM YUM

Nacho Dip I

Virginia Apple Pudding

Oh heavens! Was this ever better than I expected! And easy! I used two large apples and put it in a large flat corningware pan... I don't think that's the way it was intended.. but OHHHH my! What a nice taste! The apples were perfect after about 5 minutes total in the microwave! Oh yummy! Thanks for the recipe.. it's a keeper

Italian Salad Dressing

OMG delicious! Used less sugar (preferred taste), used half balsamic and half cider vinegar, no water but other than that the same! For a bunch of NON-salad eaters to request this dressing at a meal is HUGE! It has a lovely flavor, Cudos and hats off!

Vicki's Hush Puppies

I gotta say; the five stars is not exactly for the true recipe; so I hate to give it FIVE; but my rendition would have gotten TEN stars! First; I didn't have self rising flour OR cornmeal. Second; I completely forgot about the onion; (duh) although would have minced it as one person suggested. I halved the recipe cause there is only four of us; and it makes a LOT of hush puppies. I made about 20 hush puppies with half the recipe. I used 1/2 cup flour, cornmeal. 1 egg; about 1/3 can creamed corn. 2 tbsp of sugar. Pepper, salt and cayenne pepper to taste. *approx 1/4 tsp cayenne*. It was a bit moist so I added just a touch more cornmeal. OH! And the self-rising situation? I used about 2 tsp of baking powder to ensure a light and flaky puppy. IT WORKED! My husband HATES anything with corn in it; especially creamed corn.. he ate 10 of the puppies himself! Used tartar sauce from this site. I don't think I've ever tasted a better puppy! THANK YOU SO MUCH!

BBQ Chicken Pizza

Who would have thought that chicken on a pizza could be this good! My husband does NOT like new things.. picky picky.. but he offered to try it, because he didn't know what was beneath all that cheese! Surprised? HE LOVED IT! It's a new favourite! Didn't use the pepper's they called for, but used roasted red peppers.. and Bullseye original BBQ sauce. PERFECT!

Orzo and Tomato Salad with Feta Cheese

Well, first hint, don't use dried dill.. tastes like sticks in the salad. Interesting, but missing something, maybe more olives, maybe some italian dressing instead of lemon/vinegar combo.. I don't know, I don't think I'll make it again.

Crispy Marshmallow Balls

Not bad. I had only half the marshmallows, and half the caramels.. (thanks to husband and son!) but halved was enough to satisfy us. These are VERY sweet.WOW. But really easy and gooey to make. Nice to make in hot weather.. the only thing on was my stove.. for a few minutes... thanks!

Cucumber and Tomato Salad

Absolutely freakin fantastic! I am NOT a tofu lover, by all means, only second try, first wasn't so hot. This dish is fantastic! Smooth, crunchy and a perfect dressing to boot! I will definately make this more often. I think it's best eaten right away, but also tried it a few hours later, the tomatoes were soggy, but otherwise even better flavour! Thanks! I'm a tofu lover now!

Creamy Dill Cucumber Toasties

Who would have thought something so simple could be such a hit, and taste so good? I thought at first the cream cheese, and Italian dry mix.. too much, right? TOO strong, but when combined with the cucumber on top (I skipped the dill) it was a perfect combo! It was the big hit of a baby shower I hosted! Melba rounds were used for the base, and I'm so happy with them I'm going to make them as a snack for my family this weekend! Thanks!
