Beer Butt Chicken

I've come across a lot of chicken recipes here-NEVER have I come across one so JUICY! The smell is fabulous while it's cooking. The colouring of the paprika makes it look professionally done. The first time I made it-it sat on low on the BBQ for 2-3 hours, just used small bird with a "silver bullet" small can up it's butt. It sat fine-no issues-and we ended up turning off the BBQ after 2.5 hours, because we weren't done having fun at the neighbours yet. I honestly thought it would be ruined, sitting in an unlit BBQ for about 2 hours. Then I was scared when I invited the neighbours over to partake in our Butt Chicken... In the end, I wanted them to go home because I wanted to eat more chicken! Delicious-one of the best found recipes yet! Thank you. I'm making it again tonight = despite the really cold weather out there... it's worth it!

Chocolate Chip Pumpkin Bread

I used the recipe with real pumpkin, after it was boiled and mashed. It was ABOUT 15 oz. I didn't use water, since the pumpkin was pretty moist. I also used mini muffin tins and baked for about 10 minutes, and holy cow! The whole family, which is not keen on pumpkin, or nutmeg spices LOVED it. And it was with or without the choc chips! I've got company today, so we'll dig into the cake, as the muffins are almost gone! Wonderful recipe to use up that additional pumpkin puree! Thank you!

Fast, easy and delicious! Love to watch it puff up and it's excellent with fresh strawberries, and either whipped cream or a dash or two of Maple Syrup! YUM!

Split Pea and Ham Soup I

A VERY simple and yummy pea soup. It took about 2 hours for me, but I should have left a little more liquid in the pot, this soup is THICK! I did add 1 carrot and 1 rib of celery. A dash of salt and about 1 tsp of pepper. I also threw in a tsp of hot pepper sauce, I can always add more later. Then I used the hand mixer ( after taking out all the chunks of ham and bone.) Then threw back in some chunks of the ham. VERY delish! Thanks!

Chinese Napa Cabbage Salad

A fellow co-worker brought this in for an Easter potluck and got rave reviews. I, of course, misplaced the recipe and had to browse this site, and OF COURSE, found it here! It was pretty darn close and pretty darn tasty too! I used half a head of cabbage *which I tend not to like* and only one pkg of ramen noodles. Who would have thought uncooked ramen noodles would be any good? I had beef flavoured Mr. Noodle, so I only sprinkled a bit on it, so it wasn't too salty or MSG'y like another viewer had mentioned. I will definately use this for further parties and dinners at home. EASY AND DELICIOUS! A little soggy on day two, but still.. VERYYYY Good! Thanks

Marinated Grilled Shrimp

If I could give it 10 stars, I would have. I don't know if it makes a difference with pre-cooked shrimp, or raw, but for a non-shrimp lover, I found myself unzippering these lovely things as fast as I could so my husband wouldn't eat them all by default! Just less than 5 minutes in a grill pan on high, and cooking in their own lovely sauce, then poured on top once down. ABSOLUTELY FABULOUS! Never had anything this good in a restaurant!

Chicken Pot Pie IX

Didn't have celery seed, certainly didn't matter. Only made top crust, as other pot pie's were too "heavy" plus I could never get my bottum crust to be anything but soggy. My hubby is raving about this FABULOUS recipe, even better as left overs! Thanks so much, a new recipe for weekly menus! 04/02/08-Didn't even remember reviewing this before. Made differently, but not much. Used store bought bottom shell. Boiled as directed (although I thought ewww to boiled chicken) and boiled frozen mixed veges. Didn't quite double sauce, about 2/3 cup butter, same amount flour. Had celery seed this time... yum No chicken bouillon, just bouillon packet and 3/4 cup of milk (skim) and about 1-1/2 cup hot water. Once the pie was full of chicken and veges I poured the sauce on top. EE gads! There was a lot! I piled it high and used my own crust for the top, cut slits in it to allow steam to escape. If hubby hadn't left digital camera at in-laws you'd have lovely pic now. Now it's in our bellys. Even kids (who hate new stuff) tried it and liked it. Not too dry, oh..I precooked the bottom by itself for about 5 minutes. Bottom a bit soggy but didn't matter at all!

Pasta Pomodoro

Holy COW! Just finished consuming this delish dish and I couldn't be more pleased with this light pasta! I wanted something light to go with the baked scallops, and this was perfect! I added chicken for the kids and used canned diced tomatoes. The balsamic vinegar was a perfect touch and the chicken bouillion was not making it too thin as I first thought! THANKS!

Exquisite Pizza Sauce

Cucumber and Tomato Salad

Absolutely freakin fantastic! I am NOT a tofu lover, by all means, only second try, first wasn't so hot. This dish is fantastic! Smooth, crunchy and a perfect dressing to boot! I will definately make this more often. I think it's best eaten right away, but also tried it a few hours later, the tomatoes were soggy, but otherwise even better flavour! Thanks! I'm a tofu lover now!
