Rich and Creamy Tomato Basil Soup

Reviewed: Feb. 20, 2013
I used jarred tomatoes (specialty) w tomato juice. No fresh basil in the house so I used frozen basil 'cubes'. Found in your freezer section. 10 small cubes, 1 cube = 1 tsp basil. Used NO butter (found it didn't need it) and used 1/2 and 1/2 (fat free). Salt and pepper to taste. Was super rich and creamy. Was less than 1 cup of half and half. Perfect paired with grilled cheese sandwich on french bread.

Classic Cinnamon Rolls

Reviewed: Dec. 17, 2012
Absolutely UNBELIEVABLE! Who would have thought mashed potatoes could make such a difference! The amount is almost too large for a bread maker on 'dough' setting. Must take it out before it finishes rising. I made 12 rolls, BUT, each were the size of my head! 6 put in a 9x13 pan to control size (billowed over) and 6 put on cookie sheet. Drizzled with cream cheese frosting. Light and airy. PERFECT cinnamon roll recipe!

Jalapeno Strawberry Jam

Reviewed: Aug. 29, 2012
EXCEPTIONALLY good! Fresh jalapenos from my garden (about 1 cup) and about 2 cups crushed fresh strawberries, the rest halved as per recipe, but used 1 pack liquid pectin. 4-5 pint jam jars. WONDERFUL zing with no hiding of the strawberry. BOO YAH!

Cookies....All Dressed

Lovely flavour in this cookie! Not a flat cookie. But lovely textures. Made as suggested, with the exception of substitution of sunflower seeds for pecans (what I had on hand) YUMMY!

Homemade Flour Tortillas

Reviewed: Jul. 17, 2012
I made it AS suggested. Used the lard. Used EXACTLY that amount of water. UN believable! I can't tell you how delicious this is! Plan on fish tacos tonight, surprisingly pliable these things! Cook a weee bit longer and they get crispy. Then I added the cinnamon and sugar-my daughter was in awe! The lard made them light and flaky and I think its the key. Rolled out easily and I'm not sure I will ever buy them again. MAKE THESE!!!

Basic Pasta

Reviewed: Jun. 26, 2012
I double the recipe; but there still doesn't seem to be quite enough water. Close though. I add about 1 tbsp of olive oil and use the 'dough' setting on my bread maker so it does all the hard work. I let it rest for a few hours and have made ravioli, lasagna noodles and fettucine noodles; all by hand and a rolling pin. Easiest to use a pizza cutter (wheel). Great light pasta

Green Chile Spinach Quiche

Reviewed: Nov. 10, 2011
Although I used ham, mushrooms, onions and fresh spinach, with old aged white cheddar, the idea is the same. The flour/baking powder/salt mixture with the eggs makes for a perfectly cooked (non-runny) pie. I halved the recipe and made just one quiche. No melted butter required. WILL MAKE AGAIN.. pic to follow!
