About this Cook
Married to highschool sweetheart-two kids, presently (2006) 5 and 10 years old. Travel nurse.
My favorite things to cook
Comfort foods. Gourmet foods. Baking.
My favorite family cooking traditions
Cook and eat!
My cooking triumphs
Trying out new recipes and "changing" them up a bit to have something soo good! My problem is, I'll make something SOOO good, and then I can't repeat it because I just kind of "made it up"
My cooking tragedies
Something I made with eggplant and vinegar, with tomato paste. EE gads it was soo bad! Burning a few things.. most meals don't LOOK appetizing (I'm no Martha Stewart!) But boy, do I get a lot of compliments!

Rich and Creamy Tomato Basil Soup
I used jarred tomatoes (specialty) w tomato juice. No fresh basil in the house so I used frozen basil 'cubes'. Found in your freezer section. 10 small cubes, 1 cube = 1 tsp basil. Used NO butter (found it didn't need it) and used 1/2 and 1/2 (fat free). Salt and pepper to taste. Was super rich and creamy. Was less than 1 cup of half and half. Perfect paired with grilled cheese sandwich on french bread.

Classic Cinnamon Rolls
Absolutely UNBELIEVABLE! Who would have thought mashed potatoes could make such a difference! The amount is almost too large for a bread maker on 'dough' setting. Must take it out before it finishes rising. I made 12 rolls, BUT, each were the size of my head! 6 put in a 9x13 pan to control size (billowed over) and 6 put on cookie sheet. Drizzled with cream cheese frosting. Light and airy. PERFECT cinnamon roll recipe!
