It is officially back to school time and like many mom's (and dads!), I am working full time. By the time I get home, it is closer to dinner then not and my kiddos are starving. They can start many meals on their own but if the truth be known... they kinda like having mom cook as it seems to… MORE

About this Cook
Running at top speed mama to two, I love to write and cook. My blog focuses on cooking stories tied into life with my wild ones. I'm passionate about my wonderful children, husband, Siamese cat and coming soon puppy. I'm also an avid deleter of spam so enjoy!!
My favorite things to cook
PIZZA! Macaroni and Cheese, pesto carbonara, homemade wontons, egg rolls, spaghetti, tuna croquettes and PIZZA!.
My favorite family cooking traditions
Every year when we decorate our Christmas tree, I serve fried rice balls with marinara sauce. Over the last couple of years, I've developed a tradition of serving a taco bar on New Years eve night.
My cooking triumphs
The first time I made bulgogi marinade for my husband. He'd not had it before and raved about the meat after he grilled it.
My cooking tragedies
The night I was making homemade wontons and due to humidity, they all decided to stick to each other. Wonton balls, anyone?

Baked Fried Rice Cakes
These were quite good. I made the recipe as stated and I too thought they would never hold together once I lifted the ring. They baked up just fine and held together beautifully. As prepared, we thought on their own they were a little bland but when dipped in a bit more soy or ponzu, they were fine. Maybe just a touch of salt or perhaps some chopped green onion to give them pizzazz. My husband also used them as a base (see picture) for holding other parts of his meal. All around- tasted like fried rice and something we'll make again!

Slow Cooker Mac and Cheese
This was easy to assemble and very fuss free. Unfortunately, for me, it was still not very tastey. It did curdle and I tempered the egg into it so not sure of the problem. For me, it just didnt' have that sharp good creamy mac and cheese taste. And I used 16 ounces of extra sharp cheddar cheese I personally grated. It didn't go to waste, though. I made a batch of taco meat and the next two nights I made a taco mac and cheese casserole out of it by adding parts of the mac to some of the taco meat, mixed in sour cream and more milk, and cheese, then baking it. This, my family loved.

Grandma's Ground Beef Casserole
This is from the original poster, Mrs.Wolfie. This was my grandmothers recipe dated back to the mid-1940's. I posted as she wrote it on a recipe card. Some of the ingredients and steps may seem archaic so I wanted to make sure you all understood this is a 50 year plus recipe. The changes mentioned are nice and I'm glad so many are enjoying it. My family still prefers it the way Clatie made it.. I'm sure she is thrilled this simple recipe she made up has garnered this much attention!
