Pancetta thing..

So, I finally made the pancetta thing.  I tried to recreate what I had at Rainforest Cafe and after swimming through tons of suggestions, here's what I came up with. I'd like to submit this but I can't decide what this is- so read on and send me your suggestions. Whatever it ends up being, it was really good.

I browned a package of pancetta in a little olive oil and just before I was going to turn off the heat, I added some chopped garlic. I scooped them out, laid them on a papertowel to drain then move the pan off the heat.

In a larger bowl, I combined chopped basil, chopped grape tomatoes, minced chives, some olive oil and a little black pepper. I knew the pancetta would round out the needed salt element. I dumped the pancetta garlic stuff into the bowl with the veggies, then stirred to coat. I meant to, but forgot to, add in toasted pinenuts. Next time.

I set that bowl aside while I boiled some water. We had the pancetta stuff with rigatoni last night but I think in the future, I will serve it with mini-penne instead.  So, once the past was cooked, I scooped out a little pasta water and added it to my mix bowl. I then drained the pasta, added it to the mixture and stirred it all up.

I put it on our plates, added some grated parmesan on top and served it with arugula and Gorgonzola salad and toasted asiago filone.  The family declared it a winner!!

That sounds so good! Im not terribly creative with names, but I'd call it Pancetta Pasta. I am a big fan of meals that come together like this.
