Chicken Chimichangas with Sour Cream Sauce

this is a fantastic recipe. the only thing i did differently was instead of deep frying i baked in the oven for 10-15 minutes on 400 after brushing the outside with olive oil like another reviewer suggested, turned out GREAT and even my picky eater ate the whole thing!!

Chocolate Cake I

great for if your running low on time, very mellow chocolate flavor, i used about 3/4 cups of unsweetened chocolate and they turned out great for a spare of the moment cupcake - baked @ 350 for 20-25 minutes

Pumpkin-Oatmeal Raisin Cookies

Fantastic Cookie! i had a can of pumpkin leftover form thanksgiving i needed to use up and im glad i used some of it on this! i love oatmeal rasin cookies and i LOVE pumpkin so this was a great combo. thanks for sharing!

Homemade Four Cheese Ravioli

this was my first attempt at making pasta dough, that being said, my dough turned out TERRIBLE, but i will try that again. i didn't make the pesto sauce i made a regular red sauce. i DID make the filling however and since the dough was a pretty sad excuse for pasta, i decided that instead of giving up on the whole process i would make a lasagna instead since i already made the red sauce and a ricotta cheese filling. it turned out AMAZING the filling in this recipe is a great layer in a lasagna so next time i try too make raviloi noodles i will make sure to have my back up lasagna noodles in the pantry because it was awesome

Italian Spaghetti Sauce with Meatballs

so my dilemma has always to find that perfect balance in a sauce that is not to sweet and makes me say yummm - i am also a vegetarian and i am always looking for ways to find recipes that make everyone in my family happy (im alone on my own little vegetarian island). i made the sauce EXACTLY as written, the meatballs however i had to make adjustments since i don't eat meat so i substituted Vegi burger crumbles in place of the beef and i added some olive oil in the mix and followed the rest of the recipe exactly, took the time to make the "meatballs" and drop them in the pot and after the 30 minute cook time for the "meat" was done i checked the pot and my heart broke a little when i found them all seperated and not meatballish anymore - that being said, this is the best "meat" sauce i have EVER made, the flavor is perfect and i will not change a thing next except taking the time to form little fake "meatballs" AMAZING, and i will probably be making spaghetti alot more often now that i have found the perfect sauce, thanks for sharing!

Downeast Maine Pumpkin Bread

great pumpkin bread! my son is in love with pumpkin bread so he was excited to help with making this, and it went VERY fast in our house. next time i think i will make a nutmeg cream cheese spread for it, yumm!

This is a fantastic recipe! the only changes i made was i put 5 cloves garlic, 4 cups vegi broth instead of half and half broth and water, added an additional cup of water, and i used dried herbs b/c i could not find any fresh herbs at the market that were worth buying, put alot more spinach than the recipe called for (maybe 3/4 of a 10 oz bag?) and i let it simmer for aprox. 2 hours. GREAT! my husband loved it as well!
