Moist Yellow Cake

I made this cake for my daughter's birthday last night, and it was moist and delicious, just as promised! I didn't have 2 9x13 pans so I baked it in an 11x15 for about 38 minutes. This made for a thick, delicious cake. I topped it with buttercream frosting. Yum! This will replace my yellow cake recipe.

These are absolutely delicious. I have been making them for years, and now they have become our Sunday tradition. Follow the recipe exactly, and with the bread machine your work is cut in half.

Easy Peach Cobbler

This is truly delicious. I used canned peaches, no water or sugar, Trader Joe's yellow cake mix, and substituted mascarpone for the cream cheese. Making it again tonight!

Hearty Turkey Stew with Vegetables

This was very delicious. I did make a few adjustments: no celery, I added peas (this was more in the theme of Thanksgiving anyways,) added 1 Tbs. celery salt, 1 Tbs. fresh thyme, 1 Tbs. salt, increased broth to 4 c. and used 4 potatoes. The flavor was delicious. I served it alongside a batch of buttermilk biscuits. This one is definitely going in the recipe box and will be used with leftover Thanksgiving turkey in the future!

Cinnamon Raisin Swirl Bread

I substituted milk for water, doubled the butter and filling. This bread was soooo moist and delicious. My kids loved it, and the first loaf was gone within minutes. Definitely bake closer to 40 minutes to ensure doneness in the middle.

Best Big, Fat, Chewy Chocolate Chip Cookie

I had these at a New Year's Eve party last night, and they are SOOOO good! I'm going to try my hand at them today. Very big and soft, like what you'd buy at Mrs. Fields or Ottis Spunkmeyer's.

Oat-N-Honey Bread

This was so delicious. I added a bit more honey along with 2 Tbs. molasses to sweeten it up a bit. I also divided the dough into 15 rolls and baked them in the oven at 400 degrees for 15 minutes. This has replaced my standard bread recipe.

English Toffee

This was good homemade candy. You'll want to make sure it reaches a dark carmel color before you take it off the burner (about 10-12 minutes for my batch.) I also reduced the butter to 3/4c. and added 2 Tbs. of corn syrup to prevent sugar crystals from forming. Also, I DID NOT STIR THE POT but rather covered it with a lid. I've read that stirring causes crystal formation and results in grainy candy. When covered, the trapped steam washes any sugar crystals down the inside of the pot. Also, be sure to BUTTER YOUR PAN WELL, otherwise your candy will flake off and crumble instead of coming off in nice pieces. Next time I will probably line the pan with foil, then butter the foil to make for easy removal.

Pumpkin Chip Cupcakes

I made these for my son's Kindergarten class Harvest Party, and they were delicious! I like to add a bit more pumpkin than the recipe calls for. You can also substitute white sugar for the honey.
