Cheesy Baked Cauliflower

Only steamed cauliflower for 10 minutes or so. Also agree that it didn't need any butter and was still fabulous!

Couscous Salad with Dried Cherries

Very flavorful! Did not use the green onions and substituted Craisins for the cherries. Doubled it since we ate it as a main dish. Does not need much extra salt to taste. Couscous cooled quickly and recipe was quick to prepare. Will make again, for sure.

BBQ Pork for Sandwiches

A hit, especially with the guys! Very easy too. The hardest part was selecting the meat from the butcher and pulling out the fat when separating the cooked meat.

Irish Chicken and Dumplings

Needs lots of tweaking but still worth making. Needed way more liquid than the 3 cups of water so kept adding chicken broth throughout the cooking. Used low sodium chicken soup and only half a teaspoon of salt - still plenty of flavor. Bisquick made waaay too many dumplings. Put the vegies in at different times than called for. Used a sweet potato and cut into large cubes. Didn't shred the chicken, was fine. Also, cooked for less amount of time but used higher heat. Added thyme.

Fabulous Fried Cabbage

Sooo good! Used a half a head of cabbage as it makes a lot. Only needed to cook for about 15 minutes. Probably don't even need butter. Added four small squeezes of ginger from the Gourmet Garden squeeze tube as well. What a great easy vegetable side!

Classic Macaroni Salad

So-so. Only used 1/4 cup of sugar which was enough. Also used whole-grain macaroni. Didn't like the taste of the raw onion. The recipe as a whole seemed to lack something. It made a TON. Lasted forever.

Layered Enchilada Bake

Grubbin'! Followed the recipe as stated except added a cup of corn and left out the sour cream so it could be eaten on the side. The salad dressing is definitely what gave it a unique flavor though next time I may put in just a tad bit less than 1/4 cup.

Tasty Lentil Tacos

Barley Turkey Soup

Added spinach, garlic and about 1T. lime juice or to taste. Would also taste great w/ some parmesan on top. Definitely a great recipe, will make again, for sure.

Cannellini Bean Salad

Easy to make and delicious! A great salad to bring to a potlatch. Didn't have a red onion so substituted a regular one and it still tasted good. Doesn't make a ton, so I'd double it if serving to a group larger than four. Very flavorful, though not as much the next day.

Brown Sugar Meatloaf

THE best meatloaf. Husband couldn't stop talking about it. He ate almost the whole thing singlehandedly. Put the catsup mixture half on below, half on top of meatloaf. Easiest recipe ever!

Easy Whipped Cream

I don't know what I did wrong. I used a Kitchenaid mixer and tried the recipe twice, but both times they never made the stiff peaks I was looking for. I swear I mixed it on high for at least 10 minutes each "try," but neither time it worked. However, it still tasted great w/ the strawberry shortcake I was making. Just had to think of it as a decadent cream, and not the fluffy whipped topping I was hoping for. I also added a little more confectioners' sugar (1/3 c) and a squeeze of lemon juice. The taste was a little different - I liked it but my husband thought it tasted a little strange...didn't like the sour cream part. Not sure if I'll try this one again.

Raspberry Chocolate Supremes

I'm not sure if it was the changes I made, but the recipe was just not my favorite. I used a sugar cookie bottom from store-bought refrigerator dough. Was really hard to get out of the glass pan. 1 cup of jam was waaay too much for a 9x9 pan. Would use a half cup next time. The cream cheese/white chocolate layer was yummy and I'm not a white chocolate fan. The glaze I omitted the shortening and made a "ganache" with whipping cream and used more glaze than called for. All in all, it was OK, though sooo challenging to get out of the pan and cut up. Stuff slid around and I could hardly keep the bars together. And that was after refrigerating.

Honey Ginger Shrimp

This recipe needs some sauce and flavor, for sure! 1 T of red pepper flakes must be a misprint. We used half a tsp. and it was plenty hot. I also included a handful of fresh snow peas and when it was all cooked through, added about 1/4 cup of coconut milk. Then splashed a little low sodium soy sauce to give it the savory taste as well. Served over Jasmine rice. Divine! Will make it again, but only with the changes.

American Lasagna

I have made way too many salty lasagnas so decided to tweak this recipe quite a bit. Only 1t salt in the sauce, only 1/2t salt in the cheese mix. Was perfect. Also detest ricotta cheese so for the first time, substituted cottage for the ricotta. Hit the spot. Lastly, did not need 1.5 lbs beef. Used just a pound, and it was great. Lastly, substituted Beecher's Flagship cheese for the parmesan. Was so happy with how this turned out that I am giving it 5 stars, with my modifications!

Taco Pasta Salad

White Bean, Spinach, and Barley Stew

Following the recipe exactly, it's ridiculously bland. However, with a couple changes, we inhaled it. Used chicken broth in place of water to give it some flavor and used waaaay more than three cups. Just kept dumping it in as needed. Doubled the beans, and did not drain the beans or tomatoes. Used a lot of spinach, fresh rosemary, and used my favorite, Beecher's Flagship cheese on top. Pair with bread and you're in heaven.

Best Peach Cobbler Ever

This really was good. I did a few things differently. I used 5 peeled fresh peaches instead of canned. For the sugar, I did half white, half brown. I also added one tsp. of vanilla in the crust and a splash in the fruit. Lastly I baked it an extra five minutes as I wanted to make sure the crust was fully cooked. Served with ice cream....delicious!!!

Roasted Tomatoes with Garlic

Came out nicely! A great way to use a lot of tomatoes. Very easy side dish, too. However, tomatoes did not pop within a half hour; had to keep them in longer.
