Butter Chickpea Curry

Reviewed: Dec. 2, 2012
Only gave this four stars because I made quite a few changes to the original recipe. Substituted coconut milk for the milk and used probably about a cup's worth. Only used half a can of the tomato soup and added a can of diced tomatoes. Also used 2 large potatoes instead of 4 and included some leftover cauliflower. Very versatile recipe and could use many different types of vegetables if wanted. Would like to try adding some pineapple chunks next time.

Garlicky Quinoa and Garbanzo Bean Salad

Reviewed: Sep. 9, 2012
Doubled the recipe as the original amount didn't seem to make very much. However, only used half the amount of olive oil and it seemed to be fine. A terrific salad as it was very healthy, easy to make, and inexpensive. Would love to try it another time with feta cheese and maybe slivered almonds!

Pasta Siciliano

Reviewed: Sep. 4, 2012
Good but not amazing. Easy dish for kids. Didn't include the red pepper flakes (it was fine) and substituted kalamata olives for the black. Added stuff to taste (didn't really use measurements). Good the next morning as a cold leftover lunch dish.

Broccoli Delight Salad

Reviewed: Jul. 20, 2012
This needs some serious tweaking, though when it's done right it's delicious! (why I only gave it 4 stars). Used more than 5 cups of broccoli, not sure exactly how much, maybe 6-8 cups? Used only 1 tsp sugar, and the mayo maybe only 1/2 a cup? Minimized the vinegar as well to just 1 T. As for the bacon, I bought the pre-made stuff and just chopped it up. Worth paying extra to not have to fry it myself. When it was time to eat the salad, I just sprinkled on the bacon and sunflower kernels as I knew my husband and I were not going to eat it all in one sitting. The amount I made gave us about four larger servings. Lastly, leftovers were a tad dry, though still really tasty.

Spinach and Orzo Salad

Soooo good and you don't really have to eat cold. Added sun-dried tomatoes too. Made lots of leftovers. Perfect for a potlatch dish.

Grandma's Lemon Meringue Pie

Reviewed: Apr. 10, 2012
Followed the recipe exactly, but noticed that I needed way more time on the baking. 10 minutes is simply not enough time. Baked for an additional 30 minutes and even then, it was still soupy. Makes me wonder if I didn't cook/beat the layers for a long enough time? Very good, but will need to try again to perfect the art of meringue pie.

Tender Breaded Turkey Cutlets

Reviewed: Mar. 23, 2012
Way too much work. The breaded part did not stay on the cutlet, even after following the hints of the other reviewers. The end result wasn't too bad-tasting though.

Cabbage, Potato, and Tomato Soup

Reviewed: Mar. 23, 2012
So good, but did not stay true to the recipe (the only reason I gave it four stars). Added ground spicy pork when cooking the onions and other initial ingredients (that replaced the butter for browning) and also added two more cups of water and another tsp. of "better than bullion" flavoring. Also added noodles in at the last 10 minutes of simmering and sprinkled parmesan cheese on top. It was amazing. I must say that the leftovers were just as good, though it felt like more of a stew as it really thickened up. I think my additions really added a lot of flavor. I suspect the original recipe may have been fine but a little ho-hum.

Stuffed Peppers

Reviewed: Mar. 20, 2012
Halved the recipe. Blanched the peppers, browned the hamburger and cooked the rice ahead of time. Folded Thai basil and parmesan cheese into the filling which added a lot more depth of flavor. Also did not do any basting and cooked for only 20 minutes. Very good though definitely deviated from the original recipe.

Almond Butter Cookies

Reviewed: Feb. 11, 2012
Turned out pretty well, though super oily when putting on the cookie sheet (the nature of almond butter). Rolled cookies in sugar to add a little more sweetness. Skipped the almonds on top.

Good. Use chocolate chips to taste. Came out flatter than envisioned but still good. Pretty sweet too.

White Chili with Ground Turkey

Reviewed: Jan. 15, 2012
Really good. Only used half the cinnamon and it was plenty. Also incorporated one can of black beans which added a little variety to the soup. A great soup and seemed to taste even better with time.

Pumpkin Black Bean Soup

Reviewed: Jan. 8, 2012
Really good. Made as-is except substituted apple cider vinegar for the sherry vinegar. Was a teeny bit too strong, may only put in 2 T next time if I do apple cider.

Gorgonzola Cheese Salad

Reviewed: Dec. 31, 2011
Really good. Used feta instead of gorgonzola and used a tad less milk, though interestingly added more milk to make it less thick the next day. Used red leaf lettuce. A nice salad to serve with guests.

Butternut Squash Risotto

Reviewed: Dec. 31, 2011
This recipe is good, though I did not need to double it as it made a LOT. I also changed it up quite a bit. Roasted the squash in the oven as other reviewers had recommended. Sauteed the onions with mushrooms and garlic for more flavor. Am not sure why so much chicken stock is needed. My doubled recipe used only about 6 cups. It also took waaay longer to cook than stated, so I gave up on the recipe time and just cooked it until the rice was done. Since many reviewers had commented that it was bland, I also added a homemade feta cheese dressing from another salad, mixing it in at the end to taste. It gave it a creamier flavor. Lastly, added Beecher's flagship cheese as the topping. Very tasty.

Harvest Pumpkin Cupcakes

Wow. Didn't change a thing except I used the juice from a Satsuma orange. These were easy and oh soooo good! This one really doesn't need any tweaking!

Indian Curried Barley Pilaf

Reviewed: Nov. 18, 2011
Tasty. Probably didn't need to use all that butter but did anyway. Had to add about 1/2 tsp. more of the curry and turmeric to "up" the flavor. Used a scant half tsp. of salt. Also needed to simmer a tad big longer which required about 1/3 cup more broth. Overall was very tasty after making some minor alterations.

Lentil Soup I

Reviewed: Nov. 7, 2011
Oops, forgot to rinse lentils ahead of time but didn't seem to make a difference. Used 1 1/2 cups of brown lentils to 10 cups water (couldn't find red lentils). When lentils were relatively soft, added the potatoes and soon after the small onion (onion is not listed in the ingredients), carrot and celery. Did not use bullion cubes but added garlic salt to taste. Mashed the potatoes and a small amount of the lentils which added bulk to the soup. Also added some garlic to the soup though next time will add it earlier. Did not pay attention to time, just went by taste and feel. Did not take that long to make. Will make again. Was very good but only rated it four stars because I made a lot of changes.

Butternut Squash and Turkey Chili

Reviewed: Oct. 19, 2011
Fantastic. Have made this many times and it never lets me down. Makes a lot, but leftover are just as good, too. Freezable as well. Substituted the hominy for a cup of frozen corn, used only 1/2 tsp salt and added 1/4 tsp of allspice. Didn't miss the salt one bit.
