Cauliflower Soup

Only gave this four stars as written, but would give it five after my modifications. Here goes: Sauteed the vegetables in coconut oil instead of olive. Everything tastes better in coconut oil. Chopped the cauliflower in smaller pieces so no need to mash when steamed. Also added some cooked white rice in the soup at the end to give it a little more bulk. Seasoned with a little ground Himalayan pink sea salt to taste. Added grated parmesan cheese on top. Can't wait for the leftovers!

Overnight Blueberry French Toast

Stirred the wet ingredients in first before placing bread in pan. Only used 1 package of cream cheese in the middle (even that seemed like a lot but turned out fine) and did only 1/4 c of maple syrup. Also sprinkled cinnamon on top before throwing in fridge. Really good. Will make again!

Truly Delicious Brussels Sprouts

Best Ever Corn Muffins

Good, but definitely cake-ish. Followed the recipe exactly and had a hard time tasting the "corn" part. Daughter loved them, probably because they were so sweet! If I want to do a true cornbread recipe, I'd try a different one. However, they are still tasty.

Black-Eyed Pea Gumbo

Without the 1 tsp. of cajun seasoning, it would have been bland. However, with the seasoning and some added German sausage, it was fantastic. Only gave it 3 stars because I had made some modifications based on other reviewers' suggestions. Also used frozen black eyed peas instead of canned and they were great. Lastly, used already-cooked leftover brown rice and added it at the end which saved a lot of time. Husband loved it!

Tossed Romaine and Orange Salad

Bob's Awesome Lasagna

Made so many changes it's hard to give an accurate rating. Subbed the beef for turkey and used a little less than a full pound. Also used a little less sauce as the jar was not 32 oz. Halved the salt and garlic salt. Added Italian spices, garlic and chopped frozen spinach to the sauce as well. Mixed the mozzarella in with the cottage cheese mixture and added an egg as well as more Italian spices and a pinch of nutmeg as suggested by another reviewer. My only reason for giving it a four star was because I didn't stay true to the original recipe though with my changes I would give it a 5.

Butter Chickpea Curry

Only gave this four stars because I made quite a few changes to the original recipe. Substituted coconut milk for the milk and used probably about a cup's worth. Only used half a can of the tomato soup and added a can of diced tomatoes. Also used 2 large potatoes instead of 4 and included some leftover cauliflower. Very versatile recipe and could use many different types of vegetables if wanted. Would like to try adding some pineapple chunks next time.

Garlicky Quinoa and Garbanzo Bean Salad

Doubled the recipe as the original amount didn't seem to make very much. However, only used half the amount of olive oil and it seemed to be fine. A terrific salad as it was very healthy, easy to make, and inexpensive. Would love to try it another time with feta cheese and maybe slivered almonds!

Good but not amazing. Easy dish for kids. Didn't include the red pepper flakes (it was fine) and substituted kalamata olives for the black. Added stuff to taste (didn't really use measurements). Good the next morning as a cold leftover lunch dish.

Broccoli Delight Salad

This needs some serious tweaking, though when it's done right it's delicious! (why I only gave it 4 stars). Used more than 5 cups of broccoli, not sure exactly how much, maybe 6-8 cups? Used only 1 tsp sugar, and the mayo maybe only 1/2 a cup? Minimized the vinegar as well to just 1 T. As for the bacon, I bought the pre-made stuff and just chopped it up. Worth paying extra to not have to fry it myself. When it was time to eat the salad, I just sprinkled on the bacon and sunflower kernels as I knew my husband and I were not going to eat it all in one sitting. The amount I made gave us about four larger servings. Lastly, leftovers were a tad dry, though still really tasty.

Grandma's Lemon Meringue Pie

Followed the recipe exactly, but noticed that I needed way more time on the baking. 10 minutes is simply not enough time. Baked for an additional 30 minutes and even then, it was still soupy. Makes me wonder if I didn't cook/beat the layers for a long enough time? Very good, but will need to try again to perfect the art of meringue pie.

Tender Breaded Turkey Cutlets

Cabbage, Potato, and Tomato Soup

So good, but did not stay true to the recipe (the only reason I gave it four stars). Added ground spicy pork when cooking the onions and other initial ingredients (that replaced the butter for browning) and also added two more cups of water and another tsp. of "better than bullion" flavoring. Also added noodles in at the last 10 minutes of simmering and sprinkled parmesan cheese on top. It was amazing. I must say that the leftovers were just as good, though it felt like more of a stew as it really thickened up. I think my additions really added a lot of flavor. I suspect the original recipe may have been fine but a little ho-hum.

Stuffed Peppers

Halved the recipe. Blanched the peppers, browned the hamburger and cooked the rice ahead of time. Folded Thai basil and parmesan cheese into the filling which added a lot more depth of flavor. Also did not do any basting and cooked for only 20 minutes. Very good though definitely deviated from the original recipe.

Almond Butter Cookies

Turned out pretty well, though super oily when putting on the cookie sheet (the nature of almond butter). Rolled cookies in sugar to add a little more sweetness. Skipped the almonds on top.
