Tomato-Mint Quinoa Salad

Reviewed: Jul. 10, 2014
Excellent. It needed no changes though I did use a combo of regular and red quinoa and it was fine. Tasted even better though with feta cheese added. Great the next day. And the next!

Addictive Sweet Potato Burritos

Reviewed: May 7, 2014
Used black beans instead of kidney (only reason I gave it four stars). It made so much bean filling that I had to freeze some of it for later. Very tasty and a little different twist on burritos. The savory/sweet combo was what gave it its uniqueness!

Roquefort Pear Salad

Reviewed: Dec. 3, 2013
Best salad EVER. Used gorgonzola instead of Roquefort. Didn't include the green onions. Used more pecans than called for and a little less sugar. Used only 2 pears instead of 3 (mine were pretty large). The combination of flavors together is out of this world!

Blue Cheese Burgers

Reviewed: Jul. 28, 2013
Soooo amazing! I halved the recipe and it made six patties. Followed the recipe exactly except omitted the chives as we don't care for them. Will make again, for sure.

Cucumber-Avocado Salad Dressing

Reviewed: Jul. 28, 2013
Very tasty though I suspect it will taste even better tomorrow after the flavors have had more time to meld. You don't need to puree the garlic/olive oil separately, I just did it all at the same time in the Cuisinart.

Dessert Crepes

Reviewed: Jul. 21, 2013
Great! I used a very small amount of olive oil which helped on the "stick" issue, even though my pan is non-stick. Also did the lowest setting on my burner which was just right. Spread a little Nutella inside the crepe and topped with home-grown raspberries and powdered sugar. Amazing and quite easy!

Fresh Southern Peach Cobbler

Reviewed: Jul. 5, 2013
Followed recipe exactly. I'm not normally a cobbler fan, but this was really good. Though I had marginal peaches, the sugars made up for the lackluster fruit. The only difference is that I used a 3 qt. glass pan. It filled it up completely. The 2 qt. would have been too small.

Chickpea Macaroni Salad

Reviewed: Jun. 9, 2013
Only gave it four stars because I didn't stay true to the recipe. Doubled the amount of pasta (1 c is just not much) and kept the other amounts the same though did not use any salt. Kalamata olives were substituted for black which gave it the needed salt. Used probably only 4 oz. of feta and added the suggestion of other reviewers, adding chopped cucumber and a couple Tbsps of chopped mint.

Cauliflower Soup

Reviewed: Apr. 8, 2013
Only gave this four stars as written, but would give it five after my modifications. Here goes: Sauteed the vegetables in coconut oil instead of olive. Everything tastes better in coconut oil. Chopped the cauliflower in smaller pieces so no need to mash when steamed. Also added some cooked white rice in the soup at the end to give it a little more bulk. Seasoned with a little ground Himalayan pink sea salt to taste. Added grated parmesan cheese on top. Can't wait for the leftovers!

Overnight Blueberry French Toast

Reviewed: Apr. 1, 2013
Stirred the wet ingredients in first before placing bread in pan. Only used 1 package of cream cheese in the middle (even that seemed like a lot but turned out fine) and did only 1/4 c of maple syrup. Also sprinkled cinnamon on top before throwing in fridge. Really good. Will make again!

Truly Delicious Brussels Sprouts

Reviewed: Apr. 1, 2013
So simple and easy but still very tasty. I'll bet it would taste really good with balsamic vinegar and maybe some slivered almonds.

Followed the author's updated suggestions (most helpful review). Fantastic! Definitely tastes so much better than the store-bought stuff!

Good, though if you don't like cumin, this is not the recipe for you. Very moist as well.

Best Ever Corn Muffins

Reviewed: Feb. 28, 2013
Good, but definitely cake-ish. Followed the recipe exactly and had a hard time tasting the "corn" part. Daughter loved them, probably because they were so sweet! If I want to do a true cornbread recipe, I'd try a different one. However, they are still tasty.

Black-Eyed Pea Gumbo

Reviewed: Feb. 28, 2013
Without the 1 tsp. of cajun seasoning, it would have been bland. However, with the seasoning and some added German sausage, it was fantastic. Only gave it 3 stars because I had made some modifications based on other reviewers' suggestions. Also used frozen black eyed peas instead of canned and they were great. Lastly, used already-cooked leftover brown rice and added it at the end which saved a lot of time. Husband loved it!

Tossed Romaine and Orange Salad

Reviewed: Feb. 19, 2013
Decent, easy, and healthy, though somewhat boring. Added feta which rounded out the flavor and gave it a little more interest. Would make again if I needed to do something fast.

Bob's Awesome Lasagna

Reviewed: Feb. 19, 2013
Made so many changes it's hard to give an accurate rating. Subbed the beef for turkey and used a little less than a full pound. Also used a little less sauce as the jar was not 32 oz. Halved the salt and garlic salt. Added Italian spices, garlic and chopped frozen spinach to the sauce as well. Mixed the mozzarella in with the cottage cheese mixture and added an egg as well as more Italian spices and a pinch of nutmeg as suggested by another reviewer. My only reason for giving it a four star was because I didn't stay true to the original recipe though with my changes I would give it a 5.

Used red wine in place of sherry and it was fine. Used a little less salt too. Great recipe, though a little bland the next day.

Butter Chickpea Curry

Reviewed: Dec. 2, 2012
Only gave this four stars because I made quite a few changes to the original recipe. Substituted coconut milk for the milk and used probably about a cup's worth. Only used half a can of the tomato soup and added a can of diced tomatoes. Also used 2 large potatoes instead of 4 and included some leftover cauliflower. Very versatile recipe and could use many different types of vegetables if wanted. Would like to try adding some pineapple chunks next time.

Garlicky Quinoa and Garbanzo Bean Salad

Reviewed: Sep. 9, 2012
Doubled the recipe as the original amount didn't seem to make very much. However, only used half the amount of olive oil and it seemed to be fine. A terrific salad as it was very healthy, easy to make, and inexpensive. Would love to try it another time with feta cheese and maybe slivered almonds!
