Baked Garlic Parmesan Chicken

This was delicious and very moist! I had to bake it about 45 minutes instead of 30 to get it up to correct temperature. This is a repeat dinner.

I added 1/4 tsp. salt and 2 tsp. lemon juice in addition to the other ingredients. Also, I took another suggestion and used cashews in place of pine nuts since when I went to buy pine nuts, they were $26.99 a lb. I froze in ice cube trays. Yummy, yummy stuff. Thank you for the recipe.

Garbanzo Bean and Quinoa Salad

This was very good. I added an extra tablespoon of olive oil, and it was still a little too dry for me. Next time I would add more liquid of some type. But the flavors are so yummy - wonderful combination of flavors - this is a keeper, thank you

Aunt T's D.W.I. Rum Cake

This did not take the full 60 minutes to bake at 300 degrees. I set the timer for 50 minutes, and when I checked it with a toothpick it was already done so not sure how long it had already been done.

Baked Beans II

like others, I also cut the brown sugar & ketchup both in half since it sounded like too much. I only had 1 can of pork & beans so I substituted plain white beans for 1 can. They turned out delicious, I will make these again!

Cheesy Confetti Rice

used brown rice instead of white; this extended the cooking time to about 45 minutes. Left out the green chilies, pimentos & parsley; used cheddar cheese. This will be a keeper--I've never browned rice in butter before cooking it before, and it was superbly creamy.

Mulligatawny Soup III

I'd never made this kind of soup before either, but it is now my new favorite! I had to make a few changes: didn't have any mace, so left it out; used chicken broth instead of beef broth; added 1/2 c. uncooked white rice and let it cook in the soup about 20 minutes. Delicious, thank you for the recipe.

Classic Goulash

very, very tasty. My 2 substitutions: worcestershire sauce instead of soy sauce, and a mixture of penne pasta & whole-wheat broken up spaghetti instead of the macaroni since I didn't have any.

Chocolate Chip Orange Zucchini Bread

Teriyaki Pineapple Turkey Burgers

very delicious, this is a new staple at our house. These do well in a skillet on top of the stove too. Any kind of white cheese on top is good, we used muenster. I also substituted ground ginger from the spice cabinet when I ran out of fresh ginger and they tasted just as good.

Slow Cooker Apple Crisp

this was fabulous! I tried it with rhubarb and just added extra sugar since rhubarb is so tart. It was perfect for a day that was in the 90's when we didn't want to heat up the oven. There does seem to be more crust than fruit, but that could be either good or bad depending on your taste.

Cowboy Oatmeal Cookies

This recipe is delicious! The only ingredient swap I did was to use butter instead of margarine. I've made them twice already, and also wrote the recipe onto a 3x5 card and stuck it in my recipe box for easy access. The oil works!

this was delicious! I used brown rice instead of minute rice, so pre-cooked it before mixing it with the beef since brown rice takes longer to cook than white rice. The amount of soup & water was perfect with this.

Hazel's Meatballs

For meatballs, didnt have any cracker crumbs so used 1/2 c. quick oats instead. For sauce, used 1 c. tomato sauce, 1/2 c. ketchup, mustard & vinegar as is, 1/2 c. brown sugar, 1/4 c. apricot pineapple preserves & 1 T. worcestershire. Baked meatballs for 45 minutes then piled into a crockpot and poured sauce over top to heat up and carry to a potluck.

Creme Brulee Cheesecake Bars

No changes, other than using Krusteaz sugar cookie mix instead of Betty Crocker. These were excellent--my husband gave them 10 stars, although way too rich for my taste. This is an easy & delicious keeper recipe.
