Baby Carrot Bars

Heavenly Potatoes and Ham

Oh my goodness, this was amazing!! My daughter and I were still sneaking bites as we cleared the table. I used about 3 pounds of potatoes, cutting them into large bites before boiling. I used sour cream with chives and left out the green onion. Instead of the bread crumbs, I crumbled butter crackers (Club) over the top and sprinkled with a little Parmesan. This was so easy and will be a new family favorite!!

Zucchini Cobbler

This just out of the oven and I was so curious to try it based on such variable reviews. It is really good!! I used large zucchini, peeling them and cutting out the seeds and spongy center part. My food processor did a great job slicing the zucchini nice and thin. It also worked well in preparing the topping/crust. I took the advice of a previous reviewer and baked the bottom crust for about 15 minutes before adding the filling. The only thing I didn't do was sprinkle with the additional cinnamon at the end. While I agree that the taste is not quite what you would expect with apples (unless you used very bland ones) and the texture is a little bit different, it still has an excellent flavor. I will make this again!!

Adrienne's Cucumber Salad

I was looking for an alternative to the creamy cucumber salad that would withstand the heat. I omitted the onion (personal preference), used 1/3 cup water, 1/3 cup splenda, and 1/4 sugar. These were really good and so easy.

Zucchini Pizza Bake

This was a great recipe! I made a couple of adjustments based on what I had in the house. Used 3 eggs (needed to use them up). Instead of grated Parmesan, I used the large "flakes/chunks" which added some nice pockets of Parmesan flavor. Colby Jack instead of Monterey Jack. A jar of Ragu pizza sauce. Left off the peppers, mushrooms, olives. It was good the first night, leftovers were even better the next day!

Chocolate Mint Candies Cookies

I uused the thin mint chips and mixed them in with the dough. This was a lot easier and I'd seen previous reviews recommending this. I thought this was just an ok cookie, the mint flavor was a little too strong for me and the cookies were crispier than I prefer.

Marshmallow Brownies

These are a sugar coma waiting to happen, but sure are yummy! Not a brownie at all so don't expect that texture. More gooey than that. I took them to work and had many people ask for the recipe.

Pear Coffee Cake

This is very good! I had over ripe pears to use up and chopped them into small pieces. Used 1 1/4 cups oil, 1 cup sugar, and 1 cup Splenda. Skipped the dates (don't like them). I baked in 4 small loaf pans and 2 jumbo muffins. Makes a very moist dense "bread" - yummy! Will try again with applesauce in place of some of the oil and whole wheat flour.

Hamburger Vegetable Soup

I was not too impressed with this soup. Based on other reviews, I used beef broth instead of chicken. Hunts tomato sauce with basil, garlic, oregano. Sauteed 1 tsp minced garlic with the ground beef. Simmered the soup with the beef for 45 minutes before adding the macaroni and 1 can of kidney beans. The soup was very salty (didn't add any additional salt) and flavor was just ok. I much prefer the Hamburger Soup I from this site - I'll stick with that.

Slow Cooker Italian Beef for Sandwiches

This is great! I agree with the reviewers who suggest beef broth instead of water. If you're watching your sodium intake or don't like things as salty, I wouldn't recommend adding the extra Italian dressing. It's wonderful the way it is.

Rhubarb Dream Bars

These were excellent! I used 1 1/3 cups sugar, 1 cup Splenda, 1 1/2 cups white flour, and 1/2 cup whole wheat flour. I also used 5 cups rhubarb. Baked crust for 14 minutes and bars for 40 minutes. They set beautifully. I did cut around the edge of the pan immediately upon removing from the oven. Made clean-up and bar removal from the pan much easier. I took these to work and my co-workers raved! They were gone within a very short time. Thanks for a great recipe!

Cheesy Chicken and Rice Casserole

I took the advice of previous reviews. I used 1 can Cream of Mushroom, 1 Can Cheddar Cheese Soup. Added 1 can of sliced mushrooms, used brown rice instead of white. 1 cup of Cheddar cheese mixed in, sliced muenster (needed to use it up) on top, then topped with Ritz cracker crumbs. I thought it was way too cheesy, but my husband loved it.

Russian Style Creamy Salad Dressing

I am not a huge onion fan so recommend using a sweet onion or leaving it out. I also left out the hot sauce. With those 2 changes, I thought this turned out to be a good recipe. I've made a couple times and hubby and I enjoy.

Rhubarb Strawberry Crunch

This is a great recipe. I used 8 cups of rhubarb and 6 cups of strawberries. I love the topping so I don't cut that part of the recipe in half. I don't think it makes too much at all.

Hot Chicken Salad Casserole

This was excellent, I did add a small amount of cooked shell noodles. The water chestnuts add such a nice crunch. I am not a Mayo fan, so I did use Miracle Whip instead.
