Spinach and Bean Casserole

This is very good, but I used a 14.5 oz can of tomatoes instead and added a teaspoon of Italian seasoning to give it more flavor. I brought it to Thanksgiving dinner and my uncle kept going on and on about how much he loved it; he ate more of this than anything else, even the turkey! It travels really well and looks very pretty and colorful. The red and green might be fun at a Christmas dinner! BTW, I used frozen spinach, thawed and drained, and it was still very good.

Rum and Sweet Potato Casserole

This is absolutely FANTASTIC. I made it on Thanksgiving and now I am committed to forever bringing it for every holiday celebration. It is very sweet and VERY heavy on the rum, so I'd cut back on the rum a little bit if you're not big on a rummy taste. But my family ate the whole thing as is and couldn't get enough of it. It's VERY good! I keep kosher and made it with vanilla soymilk and margarine instead of butter, to make it dairy-free, and it was just as delicious! (Leave the vanilla out if you use vanilla soymilk!) This is definitely a 10-star recipe. Thanks!

Healthy Banana Cookies

These are very, very good and healthy! I used chunky applesauce instead of the oil and spiced rum instead of vanilla. I also added about 1/3 cup honey and another 1/2 cup of oatmeal, and left out the dates. They were SO easy and SO quick!! They didn't make a big mess of my kitchen either; no flour or milk or whatever to spill everywhere. I will definitely make them again!

Spinach Ziti

This was very good, and very creamy. My husband and friend added more spaghetti sauce to theirs, but I liked mine creamy. It reminds me of a vodka-tomato cream sauce I've had in Italian restaurants and next time I will get some vodka and try that in it. It could really use more spinach. It's VERY good. I will definitely make it again.

Cabbage Roll Casserole

YUM, YUM, YUM!!! This is fantastic. One of the best dishes we've ever had. This tastes better than traditional cabbage rolls, and it's incredibly simple. I added some Italian seasoning when browning the meat, and more Italian seasoning and garlic to the tomato sauce. This is GREAT!!!

Beef Fajita Salad

This is DELICIOUS. We couldn't get enough of it! The next day we got soft tortillas and made wrap sandwiches with the leftovers, which was also excellent. This is now one of my favorite recipes. You will LOVE it!! (We added some fajita seasoning while we browned the meat. Kicked it up a little!)

Baked Honey Mustard Chicken

This was absolutely delicious! I just used Italian seasonings instead of the parsley and basil. It was fantastic. My husband LOVED it and was really impressed. We will definitely have it again!

Blueberry Bread I

This is delicious! I substituted honey for the vegetable oil, which made it a little sweeter and lower in fat. My friend loved it. It's not too sugary to have for breakfast, but it's sweet enough for a nice dessert! I will definitely make it again!

Tortellini Soup

This soup is VERY delicious and absolutely beautiful. I added a handful of chopped baby carrots when boiling the spinach and tortellini. It was very colorful! This is probably the most delicious soup I've ever had!!
