Ke's Cajun (Dirty) Rice

Reviewed: Jul. 29, 2012
I liked this, it created a perfect base to add whatever other seasonings and spices desired. Instead of the celery flakes, I put two stalks of celery in the food processor and chopped them very fine. I also used an entire onion and entire green bell pepper. I added salt, extra cajun seasoning, red pepper flakes, and a little cayenne. It tasted a lot like Zatarains.

Campbell's® Cheesy Chicken and Rice Casserole

Reviewed: Jan. 4, 2011
I give this 5 stars based on a few changes. First, I deboned 4 chicken thighs, cut up the meat, and mixed it into the rice/soup mixture. Second, instead of white rice I used a blend of brown and whole grain rice, which I think added a lot of flavor that white rice would not. Finally, I do not like frozen vegetables or onion powder, so I instead chopped half a yellow onion, 1 bell pepper, and 2 stalks of celery. It took way longer than 45 minutes to cook, possibly because of the rice I used. I cooked it covered for 45 minutes and uncovered for 45 and it was perfect. I can't wait to have the leftovers for lunch tomorrow!!

Cheeseburger Soup III

Reviewed: Oct. 18, 2010
WOW this was so good! My husband asked for seconds. The only changes I made were I used 1 teaspoon of cayenne and 1/2 tsp of red pepper flakes, but me and my husband like our food spicy! He also requested that I serve his with extra red pepper flakes sprinkled over the top and really liked it this way. I can't wait to share this recipe with others!!

Burrito Pie

Reviewed: Sep. 2, 2010
This is soooo good! My husband loved it. I halved the recipe, as there are only two of us and I took other reviewers' advice and spread spicy refried beans on the tortillas instead of mixing it with the meat, which made for a nice overall texture and consistency. I forgot about the sour cream last night, but tried it with my leftovers for lunch today, and it was good. This is going on our list of favorites!

Cookie Balls

Reviewed: Mar. 18, 2010
These are sooo good and makes it seem like you did a lot more work than you really did! I am curious to try other combinations.. Nutter Butters with cream cheese, dipped in chocolate candy coating, and drizzled with melted peanut butter chips could be good!

Chicken Tortilla Soup II

Reviewed: Mar. 18, 2010
This is the best tortilla soup recipe! However, I have never heard of doing the tortillas at the beginning. Usually, you toast the tortilla strips in the oven, lightly salt them, then top the soup with the strips and cheese immediately before serving. That is the only modification I have made other than adding more cilantro because I looove cilantro!

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: Mar. 18, 2010
This was really good, but I agree with reviewers who have written that the wine you use makes a big difference. The first time I made it it was restaurant quality and one of the best dishes I've made, but the second time it wasn't as good and the wine taste was much stronger, as I had used a different variety of wine. I like to serve this over a bed of mashed potatoes and drizzle the drippings over the top.

Slow Cooker Pulled Pork

Reviewed: Mar. 18, 2010
This was great! I made a giant batch and my husband ate it all week for lunch.. The only change I made was it was a little dry so I spooned some of the juices from the crock pot into the meat after it was pulled and mixed it in before I added BBQ sauce. This really helped! I can't wait to try it with some good homemade BBQ sauce instead of the store-bought stuff!

Chicken Satay

I really like this recipe but it's a little salty.. Maybe less soy sauce and more peanut butter?

Loosemeat Sandwiches III

Reviewed: Mar. 18, 2010
I used the Lipton Onion Soup mix like another reviewer suggested and the sandwiches turned out FANTASTIC!! My husband, brother, and a friend of ours ate every last bit, and would have eaten more had I made a bigger batch. My husband told me he will be requesting them again soon. These are great with mustard, onions, and pickles.. My brother asked for BBQ sauce and onions and said it was great that way, too!
