Chef John's Chicken and Dumplings

Just finished making this. Followed the recipe and video exactly. It is SO good and SO easy! I've never had success with making dumplings until tonight, and it is getting thumbs up from the whole family. Watch the video, it makes it impossible to mess up!

Creamy Buttercream Frosting

I've tried several buttercream recipes and this is my favorite. It would be hard to decorate with due to the light consistency, but it's perfect for an old fashioned cake or cupcake. I used 3 sticks of butter, 3/4 cup heavy whipping cream, and 3/4 cup of sugar. I added 1 tblsp of Wilton's vanilla extract. I am going to try it some other flavors next. I think it could make a beautiful holiday cake if you added dried fruit to the top of the cake. FYI- You really need to whip the butter for the full 10 minutes.

Champagne Punch III

I made this for a fashion show last night. I didn't garnish with lemons, only fresh mint. Even though I doubled the recipe, it didn't last long. Everyone LOVED it! I got so many compliments and requests for the recipe. It is perfect if you don't want to drink had alcohol but you still want to serve something light and boozy. YUM!

Slow Cooker Pulled Pork

We made this for a baby shower BBQ we had last week. I used a shoulder roast that was on sale, got a 2 ltr of root beer, soaked the meat in root beer all day and then the night before the BBQ we started the slow cooker. (Make sure the meat is covered completely) In the morning, we drained it and added BBQ sauce. It was perfect. All day we were complimented on how good it was. No one knew how simple it was to make! We served it with grill onions, next time we will add coleslaw.

Chef John's Chocolate Lava Cake

I followed the recipe/video exactly and it turned out perfectly. My stove tends to bake hot, so I cooked 16 minutes on the nose. I used heart shaped ramekins and served with raspberry sauce and whipped cream. People were licking their plates clean.

Crisp Little Lemon Cookies

I made these when I was at home and having a major cookie craving. I typed in "cake mix" and these came up. Surprise, I had everything I needed to make them in my cupboard! These were so easy and actually pretty yummy! It is a great recipe if you have little kids who would like to help you bake. I added two cups of rice crispies as others suggested and everyone seemed to like the texture. To me, they do taste a bit too much like cake mix, but that is not a problem for most people who are not really into baking. The kids loved them. I think chocolate would be pretty yummy!

Black Magic Cake

I made this tonight. I used two 8 inch round pans and found that it didn't quite fill them as well as I would have liked. Next time I will make a double batch for this size. The cake itself tasted very good. I put lite cherry pie filling in the middle and whipped cream on top. I didn't have any issue with it being too moist. It came right out of the pan. I cooked them 35 minutes on the nose. It wasn't the best Chocolate cake I've ever tasted, but it was very good and easy to make on the fly!

Pumpkin Fritters

These were super easy to make and didn't taste bad, but they were a little on the bland side for Curry. I think I will try them again but add some ginger, mustard, and a dash of cyan like I would in a chicken curry recipe to add some bite. The resident 5 year old like them dipped in honey. As is, you could easily turn them into a spicy doughnut rolled in powder sugar, maybe add some cinnamon or pumpkin pie spice if you are going that direction? As is these would be a good dumpling on the side of a saucy Indian dish, but just as a snack, they really kind of lack.
