Tofu Salad (Hua Ren Dou Gan)

Sorry, I went to bed earlier last night and forgot to post my recipe!!
I was sick last weekend, and that's the reason I did not post a new recipe. The recipe I am sharing this week is what I always make for pot luck--Tofu Salad, but it is not nut free unfortunately (you can skip the peanuts if you have to)
Tofu Salad (Hua Ren Dou Gan) is a simple Szechuan cold dish. It is the combination of extra firm tofu (usually it is called baked Tofu or Dou Gan in Chinese in the store), green onions and peanuts. For the sauce (dressing), it is chili oil, chicken powder,
salt and sugar.
1 package baked tofu
2 green onions--chopped finely
1/2 cup roasted peanuts
3 tablespoon red chili oil
1 teaspoon chicken powder
1 teaspoon salt for dressing, 2 teaspoon for cooking
1/4 teaspoon sugar
Mix red chili oil, chicken powder, 1 teaspoon salt and sugar together, set it aside.
Bring a pot of water to a boil, and put in 2 teaspoon salt. Then put in the tofu. Keep it simmering for 3 minutes.
Take the tofu out, and let it cool down. Then cut it into thin slices. Put it in a big bowl, and put in the green onions. Mix well.
Pour in the dressing, mix everything well. Then put in the peanuts, you are ready to serve.
NOTE: To make it spicier, you may add some pepper flakes :)
