Black Bean and Corn Salad II

Yum!! Made for a family meal to go with beef and rice enchiladas. Perfect! Based on some of the reviews I read, I used less oil. I did equal parts lime juice and olive oil. And in place of the cayenne, I used half a tsp of chili powder and half a tsp of cumin. Everyone loved it and we ate it all!

Chef John's Stuffed Peppers

Yum! This is so, so good! The only things I did differently were to use brown rice and omit the red pepper flakes and cayenne since I cook for little ones. Such a great recipe.

World's Best Lasagna

With less salt, this recipe is a 5. I took the advice of many reviewers and reduced the salt by half. I also put my regular lasagna noodles in a 9x13 pan and poured boiling water over them, then let them soak for about 15 minutes. Worked great. Everything else was basically the same with minor adjustments... a little more meat because of the packages I bought. A little more tomato sauce because the smallest can I could buy was 8 ounces. A little more water to compensate for more sauce. More garlic because we LOVE garlic! I also made three layers of noodles (4 in each layer) just because I thought that would be better than two layers. It was definitely the best traditional lasagna I have ever made.

Chicken, Rice and Vegetable Soup

I was so pleasantly surprised at how good this turned out! I was a little skeptical, because I usually make chicken soups (chicken noodle, chicken corn, etc.) by boiling a chicken, making my own stock, adding my own herbs and spices, etc. But I needed something quick to throw together for a light dinner. This was perfect. I did add a small palmful each of thyme, sage, and parsley to this recipe, as well as one bay leaf. Some freshly ground pepper finished it off. Didn't need salt with the bouillon. I felt a little more chicken (2 small breasts) and rice (almost double the amount in the recipe) suited our preferences as well. So with the modifications I made, this was definitely a 5. So yummy and comforting. And came together so quickly!

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

So unbelievably good!! I actually have never made this, though. My husband makes it for us every Valentine's Day. We get really good quality steaks from our local butcher for a fraction of the cost we'd pay at a big retail store. This recipe has always been great and will continue to be a tradition of ours for years to come!

Very good, but I don't use nearly the amount of sauce as the recipe says. I just "eyeball" it. I also like to saute my veggies a little first.

Chocolate Picnic Cake

I only gave this 4 stars because I save 5 for the absolute best of the best. But there was NOTHING wrong with this recipe. It was a very yummy little cake. We are snowed in and I wanted something to bake but didn't have the luxury of running to the store for the butter I didn't have. So this recipe was perfect. Very moist and chocolatey. Had none of the problems some reviewers had. Thanks for a good recipe! I'll definitely keep it!
