Cheesy Horseradish Omelet

Green Beans

These were delicious! If you live at altitude like I do give these an extra 10 minutes at 375 degrees to get them just right. Also, you can easily adjust the butter/brown sugar amounts to your own taste. The recipe as listed may be a little sweet for some people, but not for me. I'm a sugar fiend. Just cut back on the amount of brown sugar and butter you use if they are too sweet for you.

Delicious! I went half cottage cheese and half Ricotta. Mixed in some shredded Mozarella and Parmesan then added a half pound spicy Italian sausage. The recipe as written sounds good too, but having a lot of experience making stuffed shells I used a combo that suites my preferences.

Terrific recipe! I followed instructions exactly as listed. If you are making this at altitude like me (7600 ft) increase the temperature to about 375 when baking the crust and give it extra time to brown the entire surface if necessary.

Delicious! Just brush the top with butter instead of pouring the amount listed in the recipe on top. If you are at altitude like I am (7600 ft) make sure to up the baking temperature and give extra time for the center crust to rise and brown.

Stuffed Tomatoes

These were tasty. I would recommend about twice as much sausage. I had some ricotta on hand so I mixed that with the meat/breadcrumb mixture and it gave the center a great gooey texture.

Greek Saganaki

Delicious! Don't slice the cheese too thin or it will break apart during the breading process. Didn't have a tomato so I served with avocado slices on the side because that is what I had. Might pair well with sliced onion also.

Parmesan Roasted Corn on the Cob

Very tasty. I cooked in the oven for 20 minutes at 400 degrees because it was too windy to grill. They came out great. I was very liberal with the chili seasoning and had a great zing to it. Also, as others have mentioned add the Parmesan after you grill/bake the corn to prevent sticking.

Stuffed Shells I

Delicious! You can also freeze these for use later. I scaled down to 4 servings. Used 1 cup of Ricotta and 1 cup of cottage cheese. Also, be generous with the sauce. I had to almost double what the recipe calls for.

Honey Roasted Red Potatoes

I made sure to follow other people's advice and cut back on the amount of honey and mustard proportionally. Added 1/8th tsp of cayenne which added a bit more spice to contrast the sweetness of the honey. Will be making this on a regular basis.

Deviled Eggs

Nice traditional deviled egg. I actually messed up one batch by halving the amount of mustard and mayo (wasn't paying attention to which spoon I used) and oddly enough it balanced out quite well with the normal amount of vinegar. Totally different taste than when I made the second batch right, but still quite tasty. Try it both ways if you feel like it.
