Slow Cooker Taco Soup
Very easy and delicious. I too, made a few teeny tiny changes to the original recipe. For starters, I used ground chicken instead of beef. I also used Fiesta ranch seasoning packet. I added 1/2 can of diced jalapeƱos. I used Southwestern Corn, black chili beans, and chili kidney beans. My tomatoes were salsa ready which gave it a taco like flavor. I did not use water because I forgot. I browned the chicken with onions, garlic and the taco seasoning. Threw it all in a pot for 45 min on medium and that was it. Very good and will keep as a staple. Hubby loves it!

Chicken Enchiladas II
After the adjustments I made, I gave a five star rating. Here's what I did. For the chicken, I marinated it in lime juice and garlic/onion powder, then grilled it. Instead of the cream of mushroom soup I opted for half a can of cheddar cheese soup mix, half a can of cream of chicken soup, and a can of Rotel ( which took care of the green chiles, tomato, and peppers). I kept the sour cream, omitted the milk. Topped them off with the cheese sauce mixture and cheddar cheese. They turned out heavenly! My family loved them and the hubby says it's his new Fav! We finished this meal off with a black bean, corn, and rotel mixture and mexican rice! Deliciouso*

Chuck's Favorite Mac and Cheese
This is the best Mac N Cheese by far!! I've been making this for two years now and my family loves it!! The only variation I have is that I double the recipe and add a 16 oz. pkg of parmasean cheese! The cheesier the better!!! We love this mac and cheese. We have it at least twice a month. My hubz will eat a whole pan by himself. Yummy yummy*
