Slow Cooker Baby Back Ribs

Wish I could give this 10 stars!!Thank you, Norah! These ribs were incredible, I added the Coke and liquid smoke to the pot, and rubbed with lawrys season salt, garlic salt, onion powder, paprika and black pepper. Rubbed them with the seasonings the night before and cut them up. They were ready to drop into the pot in the morning before work. Placed them in the crock added the coke and smoke and turned on LOW. When we got home, we heated up the grill, brushed em with some Masterpiece and carmelized them up on the grill. AH-MAZING!!

Slow Cooker Carnitas

I know I'm out numbered here, but I could barely eat this "carnitas". This was way too "herby" tasting, I used a smidge of cinnamon because of all the anti-cinnamon comments, I do think that didn't help but it wasn't the demise of this recipe, it was just ewww!! I wasted alot of effort on this, was very disappointing

Grilled Pork Tenderloin with Balsamic Vinegar

What a way to turn boring low fat loin chops into something fabulous! Thank you for this recipe! I simply started with some cheap balsamic dressing added some soy sauce and chili flakes plus the garlic and rosemary as stated in recipe. My plans changed so the chops ended up in the fridge marinating for about 3 days, I was worried but no need, they were amazing! I also reduced the marinade down to a syrup and poured it onto the chops, served with plain ole RiceARoni wild rice pilaf, yummmm!!

Simple Turkey Chili

Ok, I have never made good chili before, I had bought some ground turkey on sale, and hubby said, "just don't make burgers out of it!" I used this recipe plus added a jar of PACE Salsa, it was yummmmmmmmm!!! I must confess I didn't measure, but used my preference of amounts of the spices listed. Not as much Oregano but probably close to what the other measurements were for the rest of the spices. Cooked it on the stove top for about 2 hours. It's ready to go, but it's only 1:30, thought I would have to cook it all day!

Chili Rellenos Casserole

Yummy! and easy!! I know it's annoying when people rate a recipe then add all their changes, but here goes... I did what other reviewers suggested, and used the whole can of evaporated milk and didn't use the regular milk. I couldn't find Poblano chilis so I settled for Anaheim chilis, I roasted them and placed them in a bag for a few minutes then peeled and seeded them, I feel it made a definitely difference in the taste as compared to the canned chilis, that also have added salt that I don't need. I used mild enchiladas sauce and I was generous with the cheese. I made it the night before my ladie's luncheon and reheated it covered with foil, added the sliced olives at the end of the heating.. it was devoured!! yum yum!!

Sangria! Sangria!

I 3X this recipe for Superbowl Sunday. And it was just about all gone. I would say it was a definite hit. I have had peach sangria that I personally like better but this one was delish. My advice... definitely don't skimp on the fruit. I 3X'd all ingredients but the fruit and I was sorry, I ended up adding more the day of the party. it will look like A LOT of fruit but it's much better!! To me Lime was the key, added that extra zing in contrast to the sweetness of the orange juice and lemonade. OH and I did what others suggested and used Ginger ale.

Cream of Celery Soup

I would have given this recipe 5 stars but it just lacked some flavor, probably due to the fact that I didn't have carrots. I was using leftover celery from Superbowl, didn't know what to do with it, and I found this recipe. I did use my immersion (sp?) blender and pureed the celery and onions after adding the chicken broth and Almond Milk. I threw in a little half and half for richness too. What made it fun was I had some finishing salts that I put on the table and we had fun tasting the soup with the different salts. Pink Australian salt was the winner :) Everyone enjoyed it, despite missing the carrots tho!

Day Before Mashed Potatoes

BIG HIT! Great way to save time on the day of an event. I made these for Superbowl Sunday. Prepared them with garlic cloves boiled along with the potatoes. Also, I used the crock pot idea, worked GREAT!! I had to double this recipe with huge potatoes, I did not measure the sour cream and cream cheese precisely, but added as much as I felt I needed to make it the consistency I liked. I did end up adding about a stick of butter and some half and half to make them creamier. Got many, many compliments, will definitely make again!!

Cornish Game Hens with Garlic and Rosemary

Deeeelicious!! My family loved these hens. I didn't have fresh Rosemary on hand so I used dried herbs de Provence. Stuffed the hens with the lemon and fresh minced garlic as directed and added some broth in the pan as suggested so that the garlic cloves didn't burn. I forgot to add the wine and more broth to the pan so I added wine to the renderings when making the sauce. Thickened a bit with some cornstarch.. yummmy!!

The Best Red Enchilada Sauce

This sauce is delicious! The only reason I gave it 4 stars instead of 5 is that it is a bit time consuming. I as intimidated by the chilis since I hadn't worked with them before, but stripping them of the seeds was easy. toasting, easy, of course the soaking easy. The blender works great to break them up and I love love the smokiness roasting the chilis gives to the sauce. I will definitely make again!

Chicken Breasts with Herb Basting Sauce

what a fabulous, no sweat, can't mess up recipe!! I followed the recipe,but didn't add sage, cuz I don't like it and I didn't take out a measuring spoon, but I did make more of the basting sauce than called for.. doubled it pretty much. I had 5 large bone in half breasts with skin on. I combined the ingredients and allowed to sit for aabout half hour.. then I rubbed some under the skin and above, and placed in oven, I only basted once during cooking. I did place fresh rosemary sprigs on top of each breast during last 10/15 minutes of cooking. When I served, I basted with pan juices.. was yummmmy!! EVERYONE loved it!!

Mediterranean Crusted Chicken

Easy, tasty, and quick! I changed up this recipe quite a bit. I used Boneless/skinless chicken thighs. Dipped them in egg and fat free half & half, then dredged them in seasoned bread crumbs w chopped fresh basil and parmesan. I made a little sauce with the drippings, chicken broth and tuscan spreadable butter. thickened it with wondra... drizzled it on the thighs after baking. I would have followed the recipe more closely if I had all the ingredients in my pantry, I just improvised.

Easy Arugula Salad

I was surprised that the simple dressing was so good with this salad. I looooove arugula, it doesn't need much to compliment the spicey flavor. I did add a little red onion and some candied walnuts instead of the pine nuts. Also I added some fat free feta. Was fabulous!

Who needs butter?? This is absolutely delish! I followed the advice of others and used the microwave trick, cuz I didn't have the time to let it sit. I also didn't have balsamic vinegar, so I used some good red wine vinegar and added some balsamic glaze. I also added some finely chopped sundried tomatoes. My family loved it more than my pesto chicken I made as the main course!

Chicken Breasts with Balsamic Vinegar and Garlic

Love this recipe!! It's elegant and easy! I did what others suggested and did not flour the chicken breasts. I also did not add butter, trying to cut the fat, and it was still super yummy! I did use some cornstarch to thicken the sauce and I used at least double the amount of chicken broth and it was perfect! I served it with Gnocchis from trader joes, salad and artichokes. The whole family loved it!

Best brussel sprouts I have ever made! I did do as suggested to make it lower fat and used 98% fat free ham and alittle liquid smoke and some olive oil along with the garlic. I browned the sprouts just a bit.. was yummmm!
