About this Cook
I grew up cooking on a farm in the Midwest. My husband and I fell in love while cooking together on dates. Now, my cooking has changed; I was diagnosed with celiac disease and I eat ONLY gluten-free. Learning to re-make my favorite recipes was not a challenge, but it was actually fun!
My favorite things to cook
I like to cook all foods, but I am especially fond of savory foods and now creating breads that are gluten-free and still taste great.
My favorite family cooking traditions
My husband and I started the tradition of making home made egg rolls on our first New Year's Eve together; now we make them with our daughter regularly on New Year's Eve and throughout the year too. We also love soups year around.
My cooking triumphs
I make a delicious GF baguette that looks like an artisan loaf in a magazine. And though it is not like wheat bread, I love it.
My cooking tragedies
I have a really difficult old-fashioned vanilla fudge recipe that I make several batches of for the holidays; I usually have one disaster a year where I beat it too long and it hardens in my bowl:(

Spinach Enchiladas
I loved the taste of these enchiladas. It was a nice I am gluten intollerant, and this was a delicious meal that I could eat! The spinach was subtle and delicious; no one else even complained about it!

Bread in a Bag
My twelve-year-old daughter made this as a part of a science fair project, and it was the best bread! She was so proud to be able to make such a beautiful loaf with so little effort.
