Mouth Watering Medley

Reviewed: Nov. 2, 2012
Good! After reading other reviews, I added season salt to the potatoes while cooking, and added another egg and 1/4 c. Milk to the mixture. I also used a slightly smaller pan and baked it for about 10 minutes longer. Yum!

Loved how fluffy theses were! Not as much flavor as my mom's, but we really enjoyed these!

Curried Deviled Eggs by Dannon Oikos®

Reviewed: Apr. 14, 2012
Not so great. Very bland, even after adding salt and mayo. Also, make sure you REALLY like curry before making this. I was imagining a hint of curry, but no. Way curry-ish.

Fruit Ambrosia

Reviewed: Feb. 11, 2012
I did not care for this. The texture of the sauce was very syrupy and heavy, kind of a coat-your-mouth thing. I would take cool whip or whipped cream with fruit over this any day. Sorry. :(

The BF loved it! I think the sauce was too think, so I added milk later. Very good though!

Peanut Butter Loaf

Reviewed: Feb. 8, 2011
I followed the advice of previous reviewers and doubled the peanut butter and used muffin tins. I still think something is missing. Maybe a tad more salt and some mini chocolate chips? Not sure....

Basil-Pesto Almonds

Reviewed: Oct. 21, 2010
These turned out good. To make things easier, I used some pesto I had in the Fridge. Here's the modified recipe I came up with: 1 1/2 T. Prepared pesto 1/8 c. grated Parmesan 1/2 t. salt 1/4 t. garlic powder Easy and yummy!

Southwest Chicken and Wild Rice Soup

Reviewed: Oct. 19, 2010
This soup is pretty good! I used fresh chopped carrots and frozen chicken breasts, chopped. I also didn't have chipotle chili or cumin. It was just spicy enough for me, though if you like heat, you'd better be sure to add those. The soup did have a bit of that "cream of chicken soup" flavor, which is okay for now, but I may try to make my own base next time to avoid that flavor. Overall, a great variation and it was good to try something new!

To Die For Blueberry Muffins

Reviewed: Oct. 14, 2010
These were very good. I gave them only 4 stars for a couple reasons. First, I did as the recipe said and filled the muffin tuns to the top. I should have only filled them 2/3 full. Also, they took longer to bake than 25 minutes - more like 30. Other than that, they were so moist! I used blueberries that I had frozen myself, and I would recommend that if you are going to use frozen. Yum!

Creamy Edamame Risotto

Reviewed: Sep. 16, 2010
This was very good! I've never had edamame before, and I was impressed. This made more than two servings for sure, and it really would be best as a side dish rather than a main course. I'm impressed!

This tasted too, but I felt like there was just something missing, though I'm not sure what. Overall, good and fast!

Yummy!! I didn't have spinach on hand, but I'm so excited to try this again when I do have it. Also, I didn't have feta cheese but I substituted monterey jack, cubed small. Wonderful!

I was really skeptical about using tomateoes with salmon...I'd never done salmon that way before. But this was wonderful! It looks and sounds fancy, but is really easy.

So good! I wilted the spinach first, and sprinkled Monterey Jack cheese on top when the omelet was done, and it was wonderful!

Peppy's Pita Bread

Reviewed: Jun. 3, 2010
I was astonished at how good these came out!! They weren't really rising very well after I'd rolled them out, so I was skeptical. But they puffed up well! I cooled them under a damp towel to soften them - I live at a high, dry area and a paper bag just wasn't cutting it. I used these with hummus, and they were wonderful! Also note, if you are mixing by hand, make sure you knead the dough a lot, otherwise they will turn out tough.

Fish Roll Sauce

Reviewed: Apr. 27, 2010
This was alright. I had to microwave the sauce to get it thick, and even added some cornstarch. I've never had fish roll sauce before, so I have nothing to compare it to, but it was good to try something new.
