Shrimp Scampi Bake

Reviewed: Apr. 19, 2012
This was so fast, easy and yummy... the perfect combination for a meal. It made me feel like I was eating a fancy restaurant meal, but it took me less than 30 min to prepare and cook. I prepared the recipe as-is and served it over whole wheat spaghetti. I could imagine it would seem like a lot of butter if not using for sauce over pasta!

White Peach Sangria

Reviewed: Aug. 29, 2010
This continues to be my go-to recipes to make for all BBQs. I made 3 gallons for a pig roast yesterday and it was a hit. I use frozen tropical fruit blend (peaches, mangoes, pineapple, and strawberries) which makes this incredibly easy to make!

Catfish Cakes

Reviewed: Jun. 23, 2010
My boyfriend loves catfish but is super picky about his food. I was bored with just baking the fish so I decided to try these out because he also love crab cakes. These were awesome and easy. I used regular mayo and dijonaise because I didnt have miracle whip or regular mustard. I also used a mix of bread crumbs and that corn meal fish fry stuff because, again, I didnt have the buttery crackers on hand. I also baked the fish instead of boiling.

Awesome Honey Pecan Pork Chops

Reviewed: Apr. 16, 2010
This was fantastic and even better, it was EASY! I love to cook but sometimes you just want something that is quick and easy. The best thing about this, is it still has a gourmet feel while being easy. This is definitely be a dish I keep in my book for when I have a last minute dinner party. Thanks!

Easy Meatloaf

Reviewed: Apr. 13, 2010
I thought the recipe was average. The texture was good but it definitely need more doctoring up. I added some garlic and worchestire sauce but it still was lacking some flavor. I wouldn't say it's a bad recipe but not out of this world.

Carrot Cake III

Reviewed: Apr. 5, 2010
This was fantastic. I made it fo Easter to bring to my boyfriend's families house. It was my first time making anything for them so I wanted to impress and this surely did the trick. I did follow other suggestions and did half brown sugar/half white, added a little extra cinnamon and a teaspoon of nutmeg. My boyfriend's mother said it was the best carrot cake she had ever had and asked for the recipe!

World's Best Lasagna

Reviewed: Jan. 9, 2010
I made this tonight for some people from church. I've never made my own sauce or lasagna. It was so easy and sooo yummy. I think I confused some of the layers a bit but it still ended up fine. Served with some cheesy garlic bread and a salad and it was perfect.

Brunch Strata

Reviewed: Jan. 7, 2010
I used bacon instead of ham because that's what I had. I made this for an after-Christmas brunch and it was great. I warmed up some leftovers the next morning and it was still great. I added in some squash and red peppers.

Gourmet Sweet Potato Classic

Reviewed: Jan. 7, 2010
This is definitely the best sweet potato recipe that I've come across. Its much better than my mom's recipe with apples and marshmallows. I love that recipe, but this one kicks it up a notch.

The Best Rolled Sugar Cookies

Reviewed: Jan. 7, 2010
I tried making these for an after-Christmas party I had. I followed other people's suggestion and made sure the dough was very cold and worked it in small batches. It was so hard to work with and then didn't even taste good. I think the name of this recipe is incorrect. Definitely not the best rolled sugar cookies...

Pumpkin Cake III

Reviewed: Dec. 21, 2009
This was great! I took other folks suggestion and added lots of spices. I also replaced some of the oil with applesauce. It was still a bit oily. Next time I might use even more apple sauce and less oil.

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Nov. 7, 2009
I made these last night for my bible study group and they got rave reviews. Usually people will eat like one cookie and people were eating 2 or 3. I added pumpkin pie spice, just to spice it up a little bit. Overall, they are amazing. They even asked me to bring refreshments again for next time (this time I just did it on a whim). THanks!
