Mexican Chicken I

This was a great recipe and was very easy to make. I did not have any lemon juice, so i substituted lime juice and the result was still delicious!

Peanut Butter Easter Eggs

I LOVED THESE PEANUT BUTTER EGGS!!! I cut back on the sugar, but only by an ounce or two. I also added a total of 1 1/2-2Tbsp milk. I made 24 eggs out of the recipe! I did have to increase the chocolate to 12 oz and the crisco to 1 1/2Tbsp. YUMMY and EASY!!!

Marinated Baked Pork Chops

Quick Quiche

I made this recipe as it was and it was just ok! If I make this again, I would make two changes. I would omit the salt and the butter, neither one was needed. The salt was overpowering and the butter made it too greasy! Not my favorite recipe, would definately tweak recipe for next time!!!

Mexican-Style Goulash

I loved this recipe! I did make a few changes after reading the reviews. I used 1 1/2 cup corn, 1 cup uncooked pasta, 2 tsp chili powder and 1 tsp cumin. I did not change anything else, and the outcome was GREAT!!!

Beer Bread I

This simple recipe is GREAT and CHEAP! I found a Beer Bread mix in a cute brown glass bottle at a well known retail store for $9.00, plus you still had to add your own beer. Which is too high price for me, especially with a baby on the way! That is what made me search for a beer bread recipe, and this one more than meets my expectations! The only changes I made were with the help of other reviews. I used all-purpose flour 3 cups, 3 tsp baking powder, and 1 1/2 tsp salt. I also used 1/3 cup of white sugar. This recipe is absolutely delicious!!!!

This is one of our favorite recipes! The only change that I make is to lessen the tortillas by half, otherwise it seems like too much tortillas and not enough filler! Great recipe!!!

Chicken and Biscuit Casserole

I loved this recipe the only thing I altered from the original is using frozen peas instead of canned. My picky husband even enjoyed this! Next time I make this I willreduce the salt to 1/2 or 3/4 tsp. Other than that it will be made exactly the same:) Tomorrow the leftovers will be served over egg noodles!

Spinach Dip with Water Chestnuts

This recipe is superb!!! If you can't locate this recipe, it is the same as the recipe on the bag of "Knorr" vegetable soup mix. I did make mine lower in fat, by using light sour cream and light mayonaise!

Carrot Cake III

This cake is absolutely delicious!!! After reading some of the other reviews I made the following changes: 1) 1 cup white sugar and 1 cup brown sugar, 2) 1/4 tsp nutmeg, 3) 3 tsp cinnamon, 4) 2/3 cp canola oil and 1/2 cp natural applesauce, 5) 12-15oz drained crushed pnieapple. I made the icing as the original recipe called for! I also omitted the nuts from the recipe, due to some allergies in the family. The cake was amazing and I received high praise from the family! I will make this again!!!

Mexican Chicken Corn Chowder

We loved this soup!!!! It was delicious, although I did make some changes per other reviews. I used 1 cp of chicken broth instead of the hot water and boullion cubes, I added a cup and a half of frozen corn, I added a can of white potatoes (cubed), I added canned tomatoes, finally I added a couple dashes of hot sauce and pepper. I thoroughly enjoyed this chowder and so did my husband! This will be made again!!!

Beefy Baked Ravioli

This is a super easy delicious recipe. My husband is not big on italian food, but he actually asked for 2nds as well as enjoyed the leftovers. I did have to use 1 1/2 jars of sauce, which is more than it was called for!

Creamy Au Gratin Potatoes

This recipe was a little disappointing. When I cooked the sauce, it was thick and creamy. After baking the dish, it was runny and thin. Not exactly sure what occured! I baked the potatoes for an additional half hour uncovered, this did the trick the sauce thicked! Overall, it was a delicious side dish! I just wish it di not take 2 hrs to bake!

Scalloped Corn

I made this as a Thanksgiving side dish today. I was unsure if this was the recipe to make, because my extended family is very picky. This recipe was a great choice by the end of the meal there was only one spoonful left. I received many compliments. Regarding the recipe I did not change any of the ingredients. I did add the liquid from the corn, which made the scalloped corn moist and delicious. I did extend the baking time to 50 minutes. This was a wonderful recipe!!!!
