Chocolate Peanut Butter Swirl Fudge
This is amazing and easy, plus a lot cheaper of course then buying fudge in the store. Now I love chocolate so I did a 1.5 cup of peanut butter chips and 1.5 cup chhocolate, 6 oz each on sweetened condensed milk, with a few dashes of evap milk to smooth it out as I'm melting. Cling wrap in the 8x8 glass pan first yields thick/big pieces, cut em small and share! My office loved them and this is something I will make several more times!

Charley's Slow Cooker Mexican Style Meat
I love spice...this actually needed a bit more for my taste. I made it spec per the recipe but next time will likely double the spices required. I didnt want to overdue it the first time. I added 2 japenos - one seeded - as well. Also added 2 tbsp chopped garlic in addition to the garlic powder because I love garlic flavor! I followed the advice of some posters - coated the chuck roast in seasoned flour and browned in peanut oil before adding to the slow cooker. Additional on 1 tbsp of paprika and 1 tbsp of ground cumin. Im thinking I will add some tomato paste next time as well, the sauce was too thin. Otherwise..excellent. The beef was super soft and tender, moist and able to be cut with a spoon. I have used it in chimichangas and hard tacos so far and just froze alot to be used as needed.

Best Spanish Rice
Yum! I did tweek this alittle but after making it yesterday, I made a second batch just because it was so good. I used jasmine rice. The longer grain brings out more flavor in my opinion. My major change was mostly due to personal preference. In the recipe - just says "Oil" so I used 1 tbsp of seasame oil and 2 tbsp of peanut oil..and 1/2 cup of onions because I love onions. I used mild fire-roasted salsa, likely should have gone for medium. Low sodium chicken broth too. perfect!
