Grandma's Green Bean Casserole

I checked some other reviews and used 3/4 cup sour cream and added some pepper. I also added water chestnuts upon request. I only used about 1 1/4 cups cheese and mixed some in the dish. Went over very well at Thanksgiving dinner.

Juicy Thanksgiving Turkey

Very juicy and tasty. Everyone commented on how moist the white meat was. I cooked it at 325 degrees because I was scared it would dry out at the higher temp, but I think it would have been fine. I mixed the herbs in butter and rubbed it into the cavity and rubbed some butter under the skin. Only bad thing was how little is left over because people couldn't get enough of it. :)

Pesto Chicken

Soooo easy and soooo good. I followed the recipe exactly, except I needed a little more cooking time. My guy isn't a huge pesto fan, but he loved this. If you don't have prosciutto go get some!

Thai Chicken with Basil Stir Fry

This was fantastic. Who cares if it's authentic or not?! I used chile-garlic sauce instead of red pepper flakes. I didn't have any mushrooms, but added some asparagus I needed to use up. I will be making this again soon. It was also very easy to throw together.

Pork Tenderloin with Dijon Marsala Sauce

This might have been as great as everyone rated it, but the ingredient list wasn't specific enough. It didn't say what size the pork should be so my cooking time took twice as long (3.5lb tenderloin) and the sauce didn't hold up well while waiting for the pork to finish. It separated and wouldn't combine when I tried to reheat it. It also didn't specify sweet or dry Marsala. When I tasted the sauce (before I had to throw it out because of the separation) it was too sweet. I served the pork with honey mustard mixed with dijon mustard, and everyone seemed to like it. I think the problems would have been avoided if the ingredient list had been more detailed.

Tasty Breaded Seitan

Really good! I've been trying to find seitan recipes since I made a bunch of it. I thought the flavors worked really well together, and I didn't have any trouble with the breading. It stayed on fine. I added a bit of Panko breadcrumbs, but other than that I stuck to the recipe.

Exquisite Pizza Sauce

The sauce was a huge hit. I gave it 4 stars because I did change the spice amounts. I added more of all the spices, especially the hot stuff because I like spicy, and reduced the honey. It's easy to adjust to your liking, and it's really easy to make.

Classic Texas Caviar

I just made this for work and it's a hit. I used one can of black beans and one can of black-eyed peas, a can of corn in place of the bell pepper, and habenero peppers instead of jalepenos. I'll probably add one more pepper in the future to make it a little more spicy. Will make again!
