Baked Dijon Salmon

This is very delicious just as it is written. If you don't have pecans, we have used walnuts and hazelnuts and they are delicious as well. We use sockeye salmon and it is beautiful. Nice for company.

Slow Cooker Texas Pulled Pork

Like the picture shows, it needs more BBQ sauce. It is not as flavorful as I thought it would be, but adding premade BBQ sauce like in the picture makes it better. I might try a different recipe next time

Homemade Flour Tortillas

I love this recipe. I have found that they turn out just a little better when I use this high gluten flour I get sometimes. But they are good with regular flour too. I just use the whisk on my kitchen aid and it is a super easy recipe. I make less, but larger tortillas. For me a this recipe is perfect making a dozen tortillas

Health Nut Blueberry Muffins

Yummy! I had some red huckleberries that I had picked and didn't know what to do with. They are very moist even with just the little oil. I used 1/2 cup thick oats for the oat bran and quick cooking oats and ground flax seed for the wheat germ and toasted hazelnuts for the walnuts. I think if you use this basic recipe and modify somewhat, you are still going to come out with a winner. I might try a little less sugar next time because of personal preference, but am definitely keeping this recipe. Thanks for submitting! :)

Grilled Tuna

Drizzled olive oil on the 2 pound loin, sprinkled with salt and pepper (didn't have the wood chips) and oven baked 500 degrees for 8-9 min, then squeezed 1/2 lime. Yummy!!

New York Cheesecake II

I made this for my husbands birthday and everyone loved it. It was different than other cheesecakes that I have made in that it was more like the kind you get when you go out to a restaurant. I modified it a little by adding about a tsp lemon peel and 1 1/2 tsp orange peel for a nice citrus flavor, and I lined the springform pan with foil, then used 1 cup graham cracker crumbs and 1/2 cup ground walnuts and 5 Tbsp butter instead of the 6 and it turned out good. I also took the suggestion about the 400 degrees-I did it for 20 min, then turned the oven to 250 for the rest of the time and no prob with cracking. I am filing this to make again for sure.
