Oven Roasted Red Potatoes

I halved this recipe using baby new potatoes. They got burnt pretty badly which made them look nasty. I will try this again on a lower temperature.

Chicken Enchiladas I

YUMMY! I used a 4oz can of diced green chiles instead of the green peppers and I added quite a bit more cheese on the top. This was my first attempt at Enchiladas.

Triple Berry Crisp

This was delicious. I liked how you could still make out the berries in their somewhat original form while you were eating. There has got to be a way to cut down on the butter though. Spray the bottom of the pan with PAM.

Blueberry Buckle

This was awesome! I took it to a dinner party and it was eater before and after dinner. Very yummy! Followed the directions of other to use only 1 & 1/2 cup flour. I will be making this again later this week.

Black Bean and Corn Salad I

This is a great dish! Perfect for potlucks...in the morning you simply grab it out of the fridge and go. I added a bit extra red pepper and cilantro. This is fabulous when it's scooped up with a tortilla chip and washed down with a margarita.

Chocolate Caramel Nut Salad

This stuff is pretty good. I was skeptical at first but, my family really enjoyed it. I accidently made the pudding and also added the 1 cup milk and the still liked it. I think next time though I will maybe cut back on the snickers and add a bananna.
